Broiled Bananas

Slice 1 peeled banana in half lengthwise

- 1 tsp. brown sugar

Sesame Chicken Breasts

1. Preheat oven to 350. Coat a 9 x 9 inch baking dish with cooking spray
- Ingredients for Chicken:
- 4 (4 ounces each) chicken breast, boneless, skinless
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons fresh orange juice
- 2 tablespoons hoisin sauce, see shopping tips
- 1 tablespoon brown sugar
- 2-3 packets Truvia, Stevia or Splenda (sugar substitute), to taste
- 1 tablespoon ginger, from a jar, see shopping tips
- 1 teaspoon minced garlic
- 1 tablespoon cornstarch or flour
- Ingredients for Serving:
- 1 bag shredded cabbage (~5 cups)
- 2 teaspoons sesame seeds
- 2 tablespoons scallions, sliced
Mongolian Beef - Slow Cooker

Add steak strips and cornstarch to a large resealable bag, and shake until beef is thoroughly coated
- 2 1/2 pounds flank steak, cut into thin strips
- 1 cup carrot, shredded
- 3/4 cup soy sauce
- 3/4 cup packed brown sugar
- 3/4 cup water
- 1/4 cup cornstarch
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon red chili flakes
Creamy Crab & Rice Casserole

Preheat oven to 400 degrees
- First Layer:
- 1 Red Bell Pepper - cored & chopped
- 2 ribs celery - chopped
- 1 medium red onion - quartered
- 1 Tbsp. Olive Oil
- 1 cove garlic - minced
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 1/2 cup frozen corn kernels - thawed
- 3 cups cooked white rice
- Second Layer:
- 1 lb. Neufchatel cream cheese - room temp.
- 1 cup mayonnaise
- 1/2 cup milk
- 2 tsp. Old Bay Seasoning
- 2 lbs. lump crab meat
- 1/4 cup chopped fresh chives or green onions
- Third Layer:
- 3 Tbsp. butter
- 1 1/2 cups panko bread crumbs
- 1/2 tsp. paprika
- 1/4 tsp. salt
Pickled Beets & Eggs

Peel hardboiled eggs Place beets, onion & peeled eggs in non-reactive glass or plastic container
- 8 hard boiled eggs
- 2 15 oz cans whole pickled beets - juice reserved
- 11 onion - chopped
- 1 cup white sugar
- 3/4 cider vinegar
- 1/2 tsp. salt
- 1 pinch black pepper
- 2 bay leaves
- 12 whole cloves
Cranberry Creme Brulee Tartlets

Heat oven to 450. In 1-quart saucepan, mix cranberry filling ingredients
- FILLING:
- 1/3 cup Sugar
- 1/3 cup Water
- 1 cup Fresh cranberries
- 1/2 tsp. Cinnamon
- CREAM CHEESE FILLING:
- 1 12 oz pkg Cream Cheese - softened
- 2 Tbsp. Sugar
- 2 Tbsp. Heavy Cream
- 3 Eggs
- 1 tsp. Vanilla Extract
- CARAMEL:
- 1/2 cup Werther's Original Hard Candies - crushed
French Onion Soup - slow cooker

Place the onion slices in a 5-quart crockpot, add the butter, olive oil, salt, and black pepper
- 3 pounds yellow onions, cut in half and thinly sliced
- 2 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 2 ½ teaspoons kosher salt
- ½ teaspoon freshly ground black pepper
- 2 sprigs fresh thyme
- ¼ cup balsamic vinegar
- 8 cups (2 32-ounce cartons) beef broth
- 4 to 6 baguette slices, toasted (1 slice per bowl)
- ⅓ to 2 cups grated Gruyere cheese (⅓ cup per bowl)
- Place the onion slices in a 5-quart crockpot, add the butter, olive oil, salt, and black pepper.
- Cook, covered, on low overnight or for 10-12 hours. At the end of the cooking time, the onions will be dark golden brown and soft.
- Add the beef broth, balsamic vinegar, and fresh thyme.
Cabbage, Kielbasi & Noodles (Halusky)

Cook noodles according to package directions, drain and set aside
- 12 oz kielbasa or sausage, sliced
- 2 tablespoons olive oil, divided
- 1/4 cup salted butter
- 1 large onion, diced
- 1/2 head cabbage, chopped (approx. 6-7 cups)
- 1 clove garlic, minced
- 2/3 cup frozen peas
- 8 oz uncooked egg noodles
- salt and fresh ground black pepper to taste

- 3 cups dried elbow macaroni
- 3 cups shredded Swiss cheese
- 2 1/2 cups shredded Gruyere cheese
- 5 tablespoons all-purpose flour
- 3 cloves garlic, minced
- 2 cups chicken broth
- 3/4 cup dry white wine
- Salt and pepper
- 8 ounces Swiss cheese, cubed
- 12 ounces raw small shrimp, halved lengthwise
- 4 green onions, sliced
- 1 3/4 cups crushed saltine crackers (36)
- 3 tablespoons butter, cut up
