Gram's Crabmeat Salad

In a large bowl, combine macaroni, onion, celery, celery leaves, parsley & crab meat
- 1 lb Elbow macaroni, cooked, rinsed & drained
- 1/2 large sweet onion - diced
- 4 stalks celery
- 1/4 cup celery top leaves - chopped
- 1/4 cups fresh Italian parsley - chopped
- 4 cans good crab meat - drained
- 2 cups mayonnaise
- 2 Tbsp. balsamic vinaigrette (or Italian dressing)
- 1 tsp. Kosher salt -plus more to taste freshly ground black pepper
Shrimp Scampi - low carb & easy

Serves 4
- 4 tsp. olive oil
- 1 1/4 pounds med raw shrimp, peeled and deveined (tails left on)
- 6-8 garlic cloves, minced
- 1/2 cup low sodium chicken broth
- 1/2 cup dry white wine
- 1/4 cup fresh lemon juice
- 1/4 cup + 1 T minced parsley
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 4 lemon wedges
Ice Cream in a Baggie

Mix the Stevia, half & half and vanilla extract together
- 2 Tablespoon stevia ( more or less depending on sweet tooth) can use sugar but save those calories!!!
- 1 cup half & half (or light cream)
- 1/2 tsp vanilla extract
- 1/2 cup coarse salt or table salt(I used canning salt)

Grilled Maple Salmon Fillets

Preheat a lightly oiled grill to medium-hot In a bowl, combine maple syrup, mustard & ginger
- 1/4 cup Maple Syrup
- 1 Tbsp. Dijon Mustard
- 2 tsp. Minced fresh ginger
- 4 slices Pineapple (fresh if possible)
- 4 Salmon fillets (4-6 oz each)
Pasta Fragioli - Soup

Brown beef in a skillet. Drain fat from beef and add to crock pot with everything except pasta
- 2 lbs ground beef
- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks celery, chopped
- 2 (28 oz) cans diced tomatoes, undrained
- 1 (16 oz) can red kidney beans, drained
- 1 (16 oz) can white kidney beans, drained
- 3 (10 oz) cans beef stock
- 3 tsp oregano
- 2 tsp pepper
- 5 tsp parsley
- 1 tsp Tabasco sauce (optional)
- 1 (20 oz) jar spaghetti sauce
- 8 oz pasta
Lasagna

Oven 375 degrees Cook lasagna noodles according to package directions; drain and set aside
- 12 Lasagna noodles
- 1 15 oz Ricotta cheese
- 1 tsp. Garlic pressed
- 1 lb Ground beef
- 2 26 oz Spaghetti sauce (Classico de Napoli Tomato & Basil Pasta Sauce)
- 4 cups (16 oz) Shredded Italian three-cheese blend
Italian Baked Fish

Arrange filets on greased pan
- 2 16 oz Frozen Fish - thawed
- 1 8 oz can Spaghetti Sauce w/mushrooms
- 2 Tbsp. Chopped Onion
- 1 4 oz pkg Shredded Mozzarella cheese
Spiced Saltine Crackers

In a large ziplock bag, mix all seasonings
- 2 1 oz pkg Ranch Salad Dressing Seasoning 1 1/4 tsp. Cayenne Pepper
- 1 1/2 tsp. Crushed Red Pepper Flakes
- 2 cups Canola Oil
- 1 lb. pkg. Saltine Crackers (4 sleeves) unsalted
Mediterrean Scallops

Preheat broiler. Remove ends from squash and zucchini, cut both into 1/4 inch slices ( 1 1/2 cups each)
- 2 medium Yellow squash rinsed
- 2 small Zucchini - rinsed
- 2 plum tomatoes - rinsed
- 1/4 cup white wine
- 3 Tbsp. Olive Oil - DIVIDED
- 1 1/2 tsp Italian seasoning
- 1/2 tsp Kosher salt - divided
- 1/4 tsp pepper - divided
- 12 oz frozen sea scallops - thawed 1/4 cup Shrimp scampi sauce

Preheat oven to 350 and lightly grease large cookie sheets
- 1 cup butter - softened
- 2 cups sugar
- 1 15 oz Ricotta cheese
- 2 tsp. Vanilla extract
- 2 large Eggs
- 4 cups All purpose flour
- 2 Tbsp. Baking powder
- 1 tsp. Salt
- 1 1/2 cups Confectioners sugar
- 1 Tbsp. Milk
- 2 Tbsp. fresh lemon juice
