Dangerous Chocolate Cake in a Mug

Add dry ingredients to mug, mix well with a fork
- 1 Coffee mug
- 4 Tbsp. Cake Flour (plain - not self-rising)
- 4 Tbsp. Sugar
- 2 Tbsp. Cocoa powder
- 1 Egg
- 3 Tbsp. Milk
- 3 Tbsp. Oil
- Vanilla - splash
- 3 Tbsp. Chocolate chips - optional
Polenta Cakes

Serve with Mediterranean Vegetables (see separate recipe)
- 1 1/4 to 1 1/2 cups milk
- 1 cup instant polenta plus more for sprinkling on cakes later
- 2-3 Tbsp. butter
- 2-3 Tbsp. grated Parmesan cheese
- Salt & Pepper to taste
Veggie Pot Stew

- 1 small onion
- 2 stalks celery, diced
- 1 large sweet potato, chopped into 1/2" cubes
- 3 carrots, sliced
- 1 small Chayote Squash, chopped into 1/2" cubes (Or, vegetable of choice)
- 1 cup fresh or frozen green beans
- 1/2 teaspoon black pepper
- Kosher or sea salt to taste
- 1/4 teaspoon crushed red pepper flakes
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
- 1 1/2 cups vegetable broth, low-sodium
- 2 cups low-fat milk (I used 1%) Note: SKIM MILK DOES NOT WORK FOR THIS RECIPE
- 2 tablespoons cornstarch + 2 tablespoons water, optional
Beef Stroganoff

Cut meat into slivers and shake in a bag with 2 tablespoons of flour, 1/2 tsp each of garlic salt, pepper, and salt
- 3 lbs Round steak cut into 2" x 1" x 1/2" strip
- 2 med. onions Chopped
- 2 Cans Mushrooms - drained
- 1 #303 can Tomatoes
- 1 cup Beef bullion water
- 2 cups Burgundy wine
- 1 cup Sour Cream
- 1 Tbsp. Flour
- 2 oz Brandy
Julian's Pecan Pie

Preheat oven to 350 degrees
- 1 9 inch unbaked pastry shell
- 3 eggs
- 1/2 cup Dark corn syrup
- 1/2 cup Pure maple syrup
- 1/2 cup Granulated sugar
- 2 1/2 Tbsp. Margarine or butter - melted
- 1 tsp. Vanilla
- 1 tsp. Pure lemon extract
- 1 cup pecans
No Carb Stuffed Tomatoes

Preheat oven at 350. Cut tops off tomatoes like you would a pumpkin and save
- No Carb Stuffed Tomatoes
- 4 large tomatoes
- 1 finely chopped white onion
- 1 green pepper chopped bite-size
- 1/4 pound extra-lean ground beef
- 1/2 cup finely chopped celery
- Salt/pepper to taste
- parsley, chopped or dried
- Cheese for topping (about 1-2tbsp each tomato) Mozzarella, Parmesan, Cheddar, etc
Shrimp Deviled Eggs

I used salad shrimp finely chopped; lemon pepper and dry mustard
- 12 large eggs - hard boiled
- 3/4 cup mayonnaise
- 3 Tbsp. minced green onions (I didn't have these so I omitted them)
- 1 Tbsp. minced fresh parsley (ditto)
- 2 tsp. Lemon Zest (used the lemon pepper instead)
- 2 garlic cloves - pressed (omitted)
- 1/4 tsp. salt
- 1/4 tsp ground red pepper
- 1 cup finely chopped cooked shrimp (1 small pkg of salad shrimp)
Single Serve Cake

Cream butter and sugar til fluffy and creamy
- TOPPING:
- 1 Tbsp. butter (soft - not melted)
- 2 Tbsp. sugar
- 1/2 egg
- 2 Tbsp. sour cream
- 2-4 drops vanilla
- 1/4 cup regular flour
- 1/8 tsp. baking powder
- 1 Tbsp. butter
- 2 Tbsp. flour
- 1 Tbsp. brown sugar
- 1 tsp. cinnamon
