Almond Joy Cookies

I leave out the coconut
- 1 cup butter or coconut oil
- 1 1/2 cups white sugar
- 1 1/2 cups brown sugar
- 4 eggs
- 3 teaspoons vanilla
- 4 1/2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 5 cups chocolate chips
- 2 cups sweetened coconut ( usually omit this ingredient)
- 2 cups chopped almonds

- 1 cup grapefruit or orange or pineapple juice

Cauliflower & Ham Casserole

Preheat oven to 350F/180C
- t least 6 cups cauliflower flowerets, cut fairly small (1 large head cauliflower or 1 1/2 small heads)
- 1/2 tsp. salt (for water to cook cauliflower)
- 2 cups diced lean ham
- 4 oz. reduced-fat cream cheese, softened
- 3/4 cup fat-free Greek yogurt (I used my favorite fat-free Greek yogurt but you can also make this with sour cream if you prefer.)
- 2 T finely-grated Parmesan cheese
- 1/4 cup thinly sliced green onions
- fresh ground black pepper to taste
- 3/4 cup grated cheddar cheese (or more, depending on the size of your dish; use low-fat cheese for South Beach)

Cut ends off yams. Slice through middle (in half), creating 8 "towers"
- 4 Garnet Yams
- 1 Tbsp. Grated Ginger
- 2 Tbsp. brown sugar

- 1/2 tsp. salt

- 1/4 cup cold butter cut into 1/4" pieces

- Ingredients
- 2 lbs. ground beef
- 1 onion, chopped
- 3 carrots, shredded
- 1 c. celery, chopped
- 2 (28 oz.) cans diced tomatoes, undrained
- 1 (16 oz.) can red kidney beans, drained
- 1 (16 oz.) can white kidney beans, drained
- 4 cups beef stock
- 3 tsp. oregano
- 2 tsp. pepper
- 5 tsp. parsley
- 1 tsp. tabasco sauce
- 1 (20 oz.) jar Prego traditional spaghetti sauce
- 8 oz. pasta (I like using ditali pasta)
Scrambled Eggs With Cornstarch

First, crack 3 eggs into a medium bowl
- Serves 1
- 3 large eggs
- 1 1/2 tablespoons whole milk (1/2 tablespoon for each egg)
- 1 3/4 teaspoons cornstarch or potato starch (1/2 + 1/8 teaspoon for each egg)
- Salt to season
- 3 tablespoons unsalted butter (1 tablespoon for each egg)
Zucchini - Italian Stuffed Zucchini Boats

Preheat oven to 375 degrees F
- 3 medium, uniformly sized zucchini
- 1 (24 to 26 ounce) jar tomato basil marinara, divided
- 1 tablespoon olive oil
- 1 pound lean ground turkey or beef
- 1/3 cup chopped onion
- 1 teaspoon minced garlic
- 1/3 cup chopped red bell pepper
- 1/2 cup chopped brown button mushrooms
- 1/4 cup chopped fresh Italian parsley
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- Fresh ground black pepper, to taste
- 1/4 teaspoon crushed red pepper, or to taste
- 1 1/2 1 1/2 cups shredded mozzarella cheese (I used part skim)
- 1/4 cup shaved or shredded Parmesan
- 2 tablespoons Italian style Panko bread crumbs

Preheat oven to 350. Cut squash into 1/4 inch thick slices
- 3 lb. Yellow squash
- 1/2 cup chopped sweet onion
- 1 1/2 tsp salt - divided
- 1 cup grated carrots
- 1 can reduced fat Cream of Chicken Soup
- 1 8 oz container of Light sour cream
- 1/4 cup chopped fresh chives
- 1/2 cup crushed cornflakes cere4al
- 1/2 cup crushed French fried onions
- 2 Tbsp. melted butter
- 1/4 tsp. freshly ground pepper
Funnel Cakes

Mix egg and milk. Sift dry ingredients and gradually add to milk mixture
- 1 egg beaten
- 2/3 cup milk
- 1 tsp. baking powder
- 1 1/4 cup flour
- 2 Tbsp. Splenda
- 1/4 tsp. salt
- Oil for frying
- Cinnamon or powdered sugar or sugar free fruit preserves for topping.
