Tomato Tortilla Soup
By rainmaker
Combine all ingredients in a medium size sauce pan
- Garnish:
- 4 cups tomato sauce
- 4 cups chopped tomatoes
- 1/4 cup chicken stock
- 1/2 cup chopped onions
- 1/2 cup chopped green peppers
- 1/2 cup hot salsa
- 2-3 cloves minced garlic
- Sour cream
- Tortilla chips
- Cheddar cheese, shredded
Crock Pot Beef Bourguignon

Cook bacon in large skillet until crisp
- 6 slices bacon
- 3 pounds beef round steak, cut into cubes
- 1 large onion, peeled and sliced
- 2 to 3 carrots, peeled and sliced
- 3 tablespoons flour
- 1 (10 ounce) can beef broth
- 1 tablespoon tomato paste
- 2 garlic cloves, minced
- 1/2 - 1 teaspoon thyme
- 1 whole bay leaf
- 1 pound fresh mushrooms, sliced
- 1/2 cup Burgundy wine
Chex Party Mix

Heat oven to 250 degrees F
- 3 cups Corn Chex cereal
- 3 cups Rice Chex cereal
- 3 cups Wheat Chex cereal
- 1 cup mixed nuts
- 1 cup bite-size pretzels
- 1 cup garlic-flavor bite-size bagel chips
- 6 tablespoons butter
- 2 tablespoons Worcestershire sauce
- 1-1/2 teaspoons seasoned salt
- 3/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
Chicken Salad with Grapes & Pecans

Measure and mix dressing ingredients, taste and adjust seasoning if needed
- For dressing:
- 1 cup mayonnaise
- 4 teaspoons apple cider vinegar
- 6 teaspoons honey
- 1 teaspoon poppy seeds
- For salad:
- 4 cups cooked chicken, shredded or bite size pieces
- 2 oz. pecans, lightly toasted
- 1 cup red grapes, halved
- 2 small celery stalks, chopped small
Breakfast - German Apple Pancakes

Preheat oven to 400 degrees
- 8 eggs
- 1-1/2 cups flour
- 1 tsp. salt
- 1-1/2 cups milk
- 1/2 cup sugar
- 1 tsp. cinnamon
- 8 TB butter
- 4 medium apples, peeled if desired and thinly sliced
Spiced Mixed Nuts

Tossing the warm nuts in a warmed bowl helps the spiced butter coat the nuts evenly
- 1 lb. (4 cups) mixed unsalted nuts (cashews, walnuts, pecans or almonds)
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cumin
- 2 TBS. unsalted butter (I use coconut oil)
- 1 Tbs. dark brown sugar
- 2 Tbs. chopped fresh rosemary
- 1/4 tsp. cayenne
- 1-1/2 tsp. kosher salt
Oatmeal - Cranbery Maple

In a 6 quart slow cooker, add all the ingredients from oats to butter
- 1 cup steel-cut oats
- 3/4 dup dried cranberries
- 1/3 cup shaved almonds
- 2 pink lady apples, peeled and small diced
- 4 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 4 cups water
- 1 tablespoon butter
- 4 tablespoons maple syrup (to serve)
7 Layer Lettuce Salad

Mix mayonnaise and sugar together
- 1 head lettuce - cut or shredded in 9 x 13 pan
- 1/2 cup celery - chopped
- 1/2 cup onion - chopped
- 1/2 cup green pepper - chopped
- 1 pkg. frozen green peas - cooked, drained and cooled
- 1 pint mayonnaise
- 3 Tbls. sugar
- 6 - 7 oz shredded cheddar cheese
- 6 strips bacon - fried crisp & crumbled
Ham Bone Soup

1. Place the soaked beans into a very large pot and fill with enough water to cover by about 1 inch
- 1-16 oz. package 16 bean mixture - soaked overnight
- 1 leftover ham bone
- 2-1/2 cup leftover cubed ham from ham bone
- 1 large onion - chopped
- 3 stalks celery - chopped
- 4 large carrots - chopped
- 18 - 24 oz. can diced tomatoes with liquid
- 2 cans vegetable broth
- 2 - 3 cans low sodium chicken broth
- 2 Tbsp. Worcestershire sauce
- 2Tbsp. Dijon mustard
- 1 Tbsp. chili powder
- 3 bay leaves
- 1/2 tsp. black pepper
- 1 Tbsp. dried parsley
- 3 Tbsp. lemon juice
- 1 tsp. kosher salt - if needed
Appetizer - Bacon Cheddar Ranch Pinwheels

1. Combine cream cheese and ranch dressing
- 8 oz. cream cheese
- 1/4 cup ranch dressing
- 1/2 cup finely shredded cheddar cheese
- 6 pieces bacon, cooked and chopped
- 1 Tbsp. minced chives
