Slow Cooker Cranberry Pork

Place in slow cooker. Combine cranberry sauce, sugar,cranberry juice, mustard, pepper, cloves and salt/pepper
- 1 boneless pork loin (3-4 pounds, halved)
- 2 cans (16 oz) whole berry cranberry sauce
- 1 1/4 cup sugar
- 1 1/4 cup cranberry juice
- 1 tsp ground mustard
- 1/4 tsp ground cloves
- salt
Chicken Tortilla Soup (Amy's)

In a medium stock pot, heat oil over medium heat
- 1 chopped onion
- 3 cloves garlic, minced
- 1 tbs olive oil
- 2 tbs chili powder
- 1 tsp oregano
- 1 (28 oz) can crushed tomatoes
- 1 (32.5 oz) chicken broth
- 1 cup yellow corn
- 1 cup white hominy
- 1 (4 oz) chopped green chiles
- 1 (15 oz) can black beans, drained and rinsed
- 1/4 cup chopped cilantro
- 2 chicken breasts, cooked and shredded
- Toppings
- crushed tortilla chips
- sliced avocado
- shredded jack or cheddar cheese
- sour cream
Slow Cooker Beef Barley Soup

Place all ingredients into slow cooker
- 1 1/2 lbs beef, cubed
- 3/4 C. uncooked barley
- 1/2 C green peppers, diced
- 2 cloves garlic, minced (I just chopped mine)
- 1 small onion, chopped
- 1/2 C. celery, chopped
- 1 C. baby carrots in 1" pieces (I used a regular carrot and cut it in 1" pieces)
- 1 tsp. thyme
- salt and pepper
- 3 (14 1/2 oz. cans) beef broth
- 1 (28 oz. can) petite diced tomatoes
- 1 1/2 C water

In a large mixing bowl, cream butter and sugar
- Cream Cheese Filling:
- 1/3 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 1/2 cups flour
- 1 1 /2 tsp baking powder
- 1 tsp cinnamon
- 1/3 cup milk
- 2 pkgs (3 oz each) cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 3/4 cup fresh raspberries
- 3/4 cup fresh blueberries
- Streusel Topping:
- 1/4 cup flour
- 2 tbs brown sugar
- 1/2 tsp cinnamon
- 1 tbs cold butter

- 2 cups butter, softened
- 2 cups plus 3 tbs confectioners' sugar, divided
- 2 tsp vanilla
- 1/2 tsp salt
- 4 1/2 cups flour
- 1 pkg semisweet chocolate pieces

- 6 oz cream cheese
- 3 tbs melted butter
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 tbs milk
- 2 tbs chopped onion
- 2 tbs chopped pimento
- 4 cups cooked chicken, cubed
- 2 8 oz crescent rolls
- frozen peas
- 1 1/2 cups crushed season croutons or just use bread crumbs

Creamy Queso with Chorizo

- vegetable oil
- oz. fresh chorizo, casings removed
- half-and-half
- oz. Velveeta cheese, cut into cubes
- oz. Monterey Jack cheese, grated
- oz. sharp cheddar, grated
- chopped canned chipotle chiles in adobo
- kosher salt
- ancho chile powder
- chipotle chile powder
- oz. crumbled Cotija cheese or queso fresco
