- 1 4 lb center cut beef tenderloin

- 4 tsp grated lemon zest

For the pork, cut tenderloin into 4 1 1/2 inch thick filets
- 8 oz pork tenderloin trimmed
- 2 strips bacon, halved lengthwise
- 1/8 tsp each kosher salt and black pepper
- 2 tsp olive oil

- 2 tbs minced shallots
- 1/4 cup dry white wine
- 1/2 cup chicken broth
- 1 tsp each Worcestershire sauce, Dijon mustard and fresh lemon juice

- 3 ripe bananas, well mashed
- 2 eggs, well beaten
- 2 cups flour
- 3/4 cup sugar
