Chocolate Cake with Chocolate-Sour Creaming Frosting

Allow butter and eggs to stand at room temperature for 30 minutes
- 3/4 cup butter, softened
- 3 eggs
- 2 cups flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 3/4 tsp baking powder
- 1/2 tsp salt
- 2 cups sugar
- 2 tsp vanilla
- 1 1/2 cups milk
- 1 recipe Chocolate-Sour Cream Frosting
- 2 cups (12 oz pkg) semisweet chocolate pieces
- 1/2 cup butter
- 1 (8 oz carton) sour cream
- 4 1/2 cups powdered sugar
- White and dark chocolate shavings (optional)
Chicken Fajita Pasta

Cut the chicken into bite-sized pieces
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts
- 1 envelope (3 tablespoons) taco or fajita seasoning (I use this Homemade Taco Seasoning)
- 2 cups diced onion (about 1 whole onion)
- 2 cups diced bell peppers (2-3 bell peppers)
- 3-4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles
- 8 oz (about 3 cups) penne pasta
- 1/2 teaspoon salt
M&M’S Chocolate Chip Cookie Bars

Bars are my favorite kitchen shortcut because they’re so fast and easy to make
- 1/2 cup unsalted butter (1 stick), melted
- 1 large egg
- 1 cup light brown sugar, packed
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt, or to taste
- 1 cup Crispy M&M’S (or your favorite M&M'S like Dark, Pretzel, Peanut Butter, etc.), plus more for sprinkling
- 3/4 cup semi-sweet chocolate chips, plus more for sprinkling
Braised Beef Brisket

1. Stir together first 4 ingredients and, if desired, liquid smoke in a large roasting pan
- 2 (14,5-oz.) cans low-sodium beef broth
- 1 cup low-sodium soy sauce
- 1/4 cup lemon juice
- 5 garlic cloves, chopped
- 1 Tbsp. hickory liquid smoke (optional)
- 1 (7- to 9-lb.) beef brisket
- Garnish: fresh parsley sprigs
Overnight Cinnamon Rolls Recipe

In a small bowl, dissolve yeast in warm water
- CINNAMON FILLING:
- 2 packages (1/4 ounce each) active dry yeast
- 1-1/2 cups warm water (110° to 115°)

- 1/2 cup sugar
- 2 teaspoons salt
- 5-3/4 to 6-1/4 cups all-purpose flour
- 1 cup packed brown sugar
- 4 teaspoons ground cinnamon

- GLAZE:
- 2 cups confectioners' sugar
- 1/4 cup half-and-half cream
- 2 teaspoons vanilla extract
Seared Scallops with Citrus Herb Sauce

1. Pat scallops dry; sprinkle with salt, pepper and paprika
- 3/4 lb sea scallops
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/8 tsp paprika
- 3 Tbsp.butter, divided
- 1 garlic clove, minced
- 2 tbs dry sherry or chicken broth
- 1 tbs lemon juice
- 1/8 tsp minced fresh oregano
- 1/8 tsp minced fresh tarragon
Blueberry Oatmeal Muffins

1. In a large bowl, combine the first eight ingredient
- 1 1/4 cups all-purpose flour
- 1 cup quick cooking oats
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 eg, lightly beaten
- 1 cup (8 oz) plain yogurt
- 1/4 cup butter, melted
- 1 cup fresh blueberries
Yuletide Pound Cake

In a large mixing bowl, cream the butter, shortening and sugar until light and fluffy, about 5 minutes
- Glaze:
- 1 cup butter, softened
- 1/2 cup shortening
- 3 cups sugar
- 5 eggs
- 1 tsp vanilla extract
- 1 tsp rum extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 cup (8 ounces) sour cream
- 1 cup confectioners' sugar
- 2 to 3 tsp milk
Topless Reuben

- 1/4 cup sauerkraut, rinsed
- 1 slice rye/wheat toasted
- 1 tsp mustard
- 1 oz cooked slice turkey
- 1 oz slice swiss cheese
