- 2/3 cup firmly packed light brown sugar
- 8 tablespoons (1 stick) butter, softened
- 2 cups mini semisweet chocolate chips, divided
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 1/2 cups applesauce
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon vegetable shortening (do not use butter, margarine or oil)

- 1 Tablespoon Essence (I bought it already prepared)
- 2 (6-8 oz.) boneless, skinless chicken breasts, cut in halves and pounded thin
