  • 1 cup dark beer (such as Guinness)
  • 1 tablespoon cider vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons tomato paste
  • 2 tablespoons molasses
  • 2 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pounds flat-cut beef brisket, fat trimmed, cut into 1-1/2-inch chunks
  • 1 sweet onion, diced
  • 3 garlic cloves, chopped
  • 1 14-1/2 ounce can fire-roasted diced tomatoes
  • 1 15-1/2 ounce can red beans, drained and rinsed
  • 1 15-1/2 ounce can kidney beans, drained and rinsed
  • Sour cream, sliced scallions and shredded cheese (optional)
