I love to bake but am not a cookie fan
- 2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 sticks (8 ounces) unsalted butter, at room temperature
- 1 1/2 cups packed brown sugar
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 cup semisweet chocolate chips
- 1 cup butterscotch chips
- 1 cup chopped pecans
- 1 cup sweetened coconut
Old-Time Tuna Bake

Tuna Casserole I Used To Make Years Ago when we lived in Swansea
- 1 1/2 cups frozen sweet peas
- 1 can condensed cream of celery soup -- (10 3/4 oz.)
- 1 1/2 cups half-and-half or milk
- 1 tablespoon instant minced onion
- 1 teaspoon seasoned salt
- 1 small can of button mushrooms
- 2 cans tuna in water (6 oz. each) -- drained, flaked
- 1 can French fried onions (2 .8 oz.)
Sour Cream Enchiladas

In a saucepan, mix together sour cream, soup and cilantro
- 16 oz. sour cream
- 1 can cream of chicken soup
- 1 Tablespoon fresh chopped cilantro or
- 1/2 Tablespoon dried cilantro
- 2 1/2 cups cooked shredded chicken breast
- 1 can Mexican Rotel
- 1 cup chopped onions (optional)
- 8 flour tortillas
- 1 cup shredded Pepper Jack and Colby cheese blend
- 1 can diced green chiles
Grilled Patty Melts with Smothered Onions

- 1 lb lean (at least 80%) ground beef
- 1/4 teaspoon dried thyme leaves
- 1/4 teaspoon dried oregano leaves
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 clove garlic, finely chopped
- 8 slices rye bread
- 4 slices (3/4 oz each) Swiss cheese

- 1 teaspoon vegetable oil
- 2 medium onions, thinly sliced, separated into rings
