This quick-and-dirty rendition makes it easy to satisfy a chowder craving even on a busy weeknight
- 2 oz. bacon (1 to 3 slices depending on thickness), cut into 1/2-inch pieces
- 1 medium onion, diced
- 1/2 large red bell pepper, diced
- 3 Tablespoons all-purpose flour
- 4 cans (6-1/2 oz. each) minced clams, clams and juice separated (about 1-1/2 cups minced clams and 2-1/4 cups juice)
- 1 bottle (8 oz.) clam juice
- 1 can (14-1/2 oz.) diced tomatoes, with their liquid
- 3/4 lb. boiling potatoes (about 3 small potatoes), cut into medium dice
- 1/4 teaspoon dried thyme
- 2 Tablespoons minced fresh flat-leaf parsley
- Coarse salt and freshly ground black pepper
