- 1 package (10 ounces) frozen cooked shrimp, thawed
- 1/4 cup sliced green onions
- 1/4 cup Parmesan cheese
- 1/3 cup vegetable oil
- 1/3 cup red wine vinegar
- 2 1/2 teaspoons dill weed
- 2 teaspoons salt
- 3/4 teaspoon garlic powder
- 1/2 teaspoon pepper

These are fabulous! They’re fudgy on the inside (I baked mine for 40 minutes) and have a chewy outside
- 2 ounces unsweetened chocolate
- 4 ounces bittersweet or semisweet chocolate
- 10 tablespoons (1 stick plus 2 tablespoons) unsalted butter
- 1 1/2 teaspoons instant espresso powder or 2-3 teaspoons instant coffee crystals
- 1 1/4 cups sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 teaspoons vanilla extract
- 1 tiny drop or 2 of almond extract
- 3 large eggs
- 2/3 cup all-purpose flour
- 3/4 cup toasted almonds or walnuts (optional)
Beer-Battered Cod with Tartar Sauce

For a crackling crisp coating, fry the cod in small batches
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 scallion including green top, chopped
- 1 1/2 teaspoons lemon juice
- 2 tablespoons chopped dilled gherkins
- 1 tablespoon chopped capers
- 2 tablespoons chopped fresh parsley
- Salt
- Fresh-ground black pepper
- Cooking oil, for frying (approximately 1 quart)
- 1 cup flour
- 1 egg, beaten to mix
- 1 cup beer
- 2 pounds cod fillets, cut into approximately 1 1/2-by-3-inch pieces
Greek Potatoes (Oven-Roasted and Delicious!)

"These potatoes are a staple in our home
- 8 large potatoes, peeled, cut into large wedges ( about 6-7 wedges per potato)
- 4 garlic cloves, minced ( more garlic is a good thing, less garlic is a no-no for this recipe)
- 1/2 cup olive oil
- 1 cup water
- 1 tablespoon dried oregano ( get the Mediterranean, it's the best!)
- 1 lemon, juice of, to 1 1/2 Tablespoons
- Sea salt
- Fresh coarse ground black pepper

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt
- 1 1/2 sticks unsalted butter, at room temperature
- 1/2 cup plus 2 tablespoons packed light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 large egg white
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 cups quick-cooking rolled oats
- 1 cup semisweet chocolate chips
- 1/2 cup white-chocolate chips

- 3/4 cup packed light brown sugar

- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 2 cups semi-sweet chocolate chips

- 2 1/2 Tbsps butter or margerine
- 2 1/2 Tbsps sugar
- 1 tsp salt
- 3 cups bread flour

Nancy's Tourtiere (French Meat Pie)

- FILLING:
- 1 1/2 pounds ground pork (I used 1 lb ground pork and 1 lb
- ground beef)
- 1 large baking potato (I cooked an all-purpose potato in the microwave instead)
- 1 large onion, minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground cinnamon (I used 1/4 tsp.)
- 1/4 teaspoon ground cloves (I used 1/8 tsp.)
- 1 dash ground allspice
- 1/2 cup water (I used 1 cup, as advised in one of the REVIEWS above)
- PASTRY:
- 1 recipe pastry for a 9-inch double crust deep dish pie
- 1 egg
- 1/4 teaspoon paprika

- 2 pounds red-skinned potatoes, peeled, cut in 1/2-inch chunks
- 1 teaspoon salt
- 2 hard-boiled eggs, peeled and chopped
- 1 cup fresh or frozen peas, cooked, drained
- 1/2 cup finely chopped red onion
- 2/3-1 cup mayonnaise, as desired
- 1 tablespoon sour cream, optional
- 2-3 teaspoons prepared mustard, or to taste
- Salt and freshly ground black pepper, to taste
