Frittata with Potato and Bacon

If you’ve never had a Frittata, it’s sort of like a quiche without a crust
- 3 slices bacon, coarsely chopped
- 2 tablespoons olive oil
- 1/2 cup onion, chopped
- 1 (15-ounce) potato, peeled and cut into 1/2 inch cubes
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 large eggs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil (I used 1 tablespoon freeze dried)

- 1 tablespoon vegetable oil
- 2 chicken breasts, cubed
- Salt and pepper
- 1/2 cup onion, diced
- 2 garlic cloves, minced
- 1/2 cup green bell pepper, diced
- 1/2 cup red bell pepper, diced
- 1 (14 ounce) can corn, drained
- 1 (14 ounce) can diced tomatoes and green chilies, undrained
- 1 (14 ounce) can black beans, rinsed and drained
- 2 tablespoons chili powder
- 1 tablespoon paprika
- 1 teaspoon dried chipotle powder
- Salt and pepper
- 2 cups white rice, cooked (cooked) or 2 cups brown rice (cooked)
- 1 cup shredded cheese (for topping)
- Sour cream (for topping)
