Lemon Cupcakes

Now…I have a little confession to make
- 1 1/2 cups (3 sticks) of REAL butter
- 3 cups cake flour (no substitutions here–you really need the lightness of cake flour)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 ups sugar
- 5 large eggs
- 2 teaspoons vanilla extract
- 4 Tablespoons freshly squeezed lemon juice
- Zest of 2 lemons (just zest the other lemons before you squeeze them)
- 1 cup buttermilk
Cheese-Topped Beef Vegetable Casserole

In medium heavy kettle or Dutch oven, cook meat, stirring, until it loses its red color
- 1 pound ground beef
- 1 1/2 cups water
- 1 envelope (3/4 ounce) brown-gravy mix
- Salt
- 1/4 teaspoon pepper
- 1/2 teaspoon poultry seasoning
- 2 medium onions, sliced
- 4 carrots, sliced
- 4 raw medium potatoes, sliced
- 1/3 cup finely shredded sharp Cheddar cheese

- CAKE:
- 2/3 cup oleo margarine
- 1/2 cup packed brown sugar
- 1 cup granulated sugar
- 2 eggs, beaten
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup buttermilk

Why Won't My Pie Crust Brown?

QUESTION: I am a few months into German living and had to figure out something to do with the fruit my neighbors ke...
- Reply 1: Do you use an egg wash or a little bit of creme brushed on top? That could help it turn the golden (but shiny) brown color you're after.
- It's also really important (in my experience) when making your crust that the butter is VERY cold when you make the crust, and that you let the crust chill for at least 4 hours before rolling it back out to put into your pie plate.

- Reply 2: I agree. Chilled pastry makes a big difference, also to the texture of the cooked pie case, and I routinely use a little milk brushed on the top of my pies which gives a nice golden browning (not shiny).

- Reply 3: Beat an egg and apply to the pastry as a wash. Put the whole thang into the fridge to chill for a while, 30 minutes say, then apply another coat of eggwash. Super crispy caramelised goodness guaranteed.
