Beef and Bean Chili

- 4 slices bacon cut into 1/2-inch pieces
- 3 pounds ground beef
- 4 cups chopped onions
- 1/4 cup minced garlic cloves
- 2 medium fresh jalapeno chiles, ribs and seeds removed for less heat, if desired, minced
- 3 tablespoons chili powder
- 3 tablespoons unsweetened cocoa powder
- 4 teaspoons ground cumin
- 2 cans (28 ounces each) whole tomatoes in puree
- 2 tablespoons unsulfured molasses
- Coarse salt
- 3 cans (15 1/2 ounces each) pinto beans, drained and rinsed

- 1 (16 ounce) cans milk chocolate frosting

Golden Yellow Cake

TO MAKE CAKE: 1. Preheat the oven to 350 degrees F
- CAKE:
- 6 ozs vanilla yogurt
- 4 tbsps vegetable oil [divided]
- 1 cup butter (2 sticks softened or at room temp)
- 8 egg yolks
- 2 cups sugar
- 2-1/2 cups cake flour (sifted)
- 3 tsps baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 1 tsp vanilla extract (clear but regular dark is fine)
- 7 drops yellow food coloring (liquid but powder works fine)
- TOPPING:
- 1 &1/2 sticks butter
- 3 tablespoons cocoa
- 1/3 cup milk
- 3 &1/4 cups confectioners sugar
- 1 teaspoon vanilla
Riverside Butter Cake

- 3 cups cake flour
- 2 cups sugar

- 1 teaspoon onion powder
- 1 teaspoon paprika
- 3/4 teaspoon salt

- 1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up

Lately, I have been seeing so many fun recipes that are made by microwaving in a mug
- Struesel Topping:
- 1 Tbsp butter, softened
- 3 Tbsp sugar
- 2 Tbsp applesauce
- Splash of vanilla extract
- 1/4 cup flour
- 1/8 tsp baking powder
- pinch of salt

- 1 Tbsp butter
- 2 Tbsp flour
- 1 Tbsp brown sugar
- 1/4 tsp cinnamon
Seafood Pie

Here's a dish that I typically make often, but for some reason haven't made it all winter
- 1 cup lobster meat, cut into pieces
- 1 cup shrimp or more
- 1 pound fresh haddock or any white fish cut into 2 inch pieces
- 2 cups Ritz crackers, crushed fine
- 1 cup corn flakes, crumbled w/ rolling pin
- 1 TBL cornstarch mixed w/ a few tsps of milk
- 2 TBLS flour
- 1 stick unsalted butter
- 1 tsp worcestershire sauce
- 3-4 drops tobasco sauce
- 1/2 pint cream
- 1/2 cup diced scallions
- Ground pepper to taste-NO salt needed
- Paprika
- Olive oil
