A while back, I tried my hand at re-creating a delicious soup I had eaten at a restaurant

  • 1 Tablespoons butter
  • 1/3 cup onion, finely chopped
  • 1/4 cup jalapeno pepper, cored and seeded, finely chopped
  • 1/2 cup red pepper, cored and seeded, finely chopped
  • 4 cups chicken stock or broth
  • 1 1/4 cups water
  • 1/4 cup wild rice
  • 1/3 cup brown rice *see note below
  • 1 teaspoon cumin
  • 1 Tablespoon tomato paste (mainly for colour, so optional if you don’t have some handy or don’t want to open a can)
  • 3/4 teaspoon chipotle chili powder (easily available, but you can use regular chili powder as well)
  • Optional, for some heat: 1-2 tsp. finely diced chipotle peppers in adobo sauce
  • 2 cups frozen corn
  • 2 cups COOKED chicken, shredded or diced into quite small pieces of 1/2-inch square or so
  • 1 cup milk
  • 2 Tablespoons cornstarch
  • Salt and pepper, to taste
