- 1 teaspoon butter
- 1/4 teaspoon white pepper
- 1 can (6-1/2 ounces) chopped clams, drained

- 3 lbs boneless skinless chicken breasts, 1 inch slices
- 3 cups white rice
- 16 ounces tomato sauce, cans
- 1 small onions, diced
- 2 garlic cloves, chopped
- 1 teaspoon cumin
- 1 teaspoon salt ( or salt to taste)
- 3 tablespoons canola oil ( or what ever you got on hand)
- 6 cups water
Creamy Seafood Chowder with Bacon

The cream in the soup tempers most of the jalapeño’s heat, but you can still taste its bright, fresh flavor
- 4 slices bacon, cut crosswise into 1/4-inch strips
- 1 medium shallot, minced
- 1 large jalapeño, seeded and very finely chopped (about 2 Tbs.)
- 2 Tablespoon all-purpose flour
- 2 6-1/2-oz. cans chopped clams, clams and juice separated (about 1 cup juice)
- 2 8-oz. bottles clam juice
- 1 cup heavy cream
- 8-10 oz. unpeeled red potatoes (about 2 medium), scrubbed and cut into 1/2-inch dice
- 1/2 teaspoon dried thyme
- 3/4 lb. skinless haddock or cod fillets
- Kosher salt and freshly ground black pepper

- 1 Tablespoon vegetable oil
- 1/4 cup onion, finely chopped
- 1 jalapeno pepper, seeded and finely chopped
- 12 oz. white American cheese, shredded (found at the deli counter)
- 4 oz Monterey Jack cheese, shredded
- 1/4-2/3 cups milk
- 1 tomato, seeded and finely diced
- 2 Tablespoons cilantro, minced

- 1 32-oz jar spaghetti sauce flavored with meat
- 1 teaspoon Italian Seasoning
- 1 large clove garlic, minced or pressed
- 1/4 cup of water
- 1 package (8-oz) lasagna noodles
- 1/2 lb lean ground beef (optional)
- 3 cups shredded cheddar or jack cheese
- 1 cup (8 oz) ricotta cheese or cottage cheese
- 1 package (8 oz) mozzarella cheese thinly sliced
- Grated Parmesan cheese

- 1/2 teaspoon each: cumin, minced cilantro
- 1/4 teaspoon ground red pepper

- 2 tablespoons butter
- 1 cup sour cream
- 8 ounces cream cheese
- 1 small bunch sliced green onions

- 12 (8-inch) flour tortillas
