CREPES: Whirl all batter ingredients in an electric blender for about 1 minute
- BATTER:
- 1/2 cup cold water
- 1 cup milk
- 3 eggs
- 1/2 teaspoon salt
- 1 1/2 cups sifted flour
- 3 Tablespoons melted butter

- FILLING:
- 2 cups hot "medium" cream sauce
- 2 Tablespoons dry sherry or Sauterne
- 1/2 cup grated Swiss cheese
- 3 cups cooked shellfish meat (shrimp, crab, etc., or combo)
- 3 Tablespoons chopped scallions
- Salt and pepper to taste
