Melt and drizzle over dry ingredients
- drizzle:
- 3/4 cup almonds
- 1 cup coconut
- 3 cups oats
- 1/3 cup brown sugar
- 1/2 cup sunflower kernals
- 1 cup bran bits
- Optional: cranberries, dried blueberries, walnuts
- 1 Tbsp peanut butter
- 1/4 cup honey
- 1/4 cup vegetable oil
- 1 tsp cinnamon
- 1 1/2 tsp vanilla
Steak and Potatoes

Lay more potatoes on top. Put in oven at 375 uncovered
- 2 cups onion, sauteed
- 1 lb. flank steak, browned and sliced
- 4 oz. mushrooms, chopped
- 1 1/2 cups beef stock
- 1/4 cup flour
- 2 ripe olives, soaked in molasses and vinegar, chopped
- 1 Tbsp. thyme

- 1/4 cup seasoned bread crumbs
- 1/4 cup plain bread crumbs

Barley & Lentil Soup

Heat oil in heavy 4 quart saucepan over medium-high heat
- 3 tbsp. olive oil
- 2 large onions, chopped
- 4 garlic cloves, chopped
- 3 carrots, sliced
- 4 celery stalks, chopped
- 1 red bell pepper, chopped
- 8 oil-packed-sun-dried tomatoes, drained & chopped
- 2 tsp. drained basil, crumbled
- 1 tsp. dried oregano, crumbled
- 6 (14 1/2 oz.) cans (about) beef broth
- 1 (28 oz.) can crushed tomatoes
- 2 tbsp. tomato paste
- 1 cup pearl barley
- 1 cup lentils
- Salt & freshly ground black pepper
- 1/4 cup fresh parsley, chopped (optional)
Bulgur Salad

1. In a large bowl, pour 1 cup boiling water over the bulgur
- 1 cup dried bulgur
- 1 cucumber, peeled, seeded, and finely chopped
- 1 small red onion, finely diced
- 1 cup chopped fresh parsley (packed down)
- 1 (or 2) garlic cloves, minced
- 3 tablespoon lemon juice
- 2-3 tablespoon olive oil
- Salt & pepper
Chili Chicken & Bacon Salad

1. Heat the oven to 220C/FAN 200C/GAS 7
- 2 boneless skinless chicken breast fillets
- 2 1/2 tbsp. sweet chili dipping sauce (we used Blue Dragon)
- 2 tbsp. lime juice
- 175 g/6 oz. oven chips
- 5 rashers streaky bacon
- half a 75g bag watercress
- 2 heads chicory, thickly sliced
- 4 spring onions, trimmed and sliced at an angle
- 2 small avocados, peeled, stoned and cut into wedges
Hash Brown Casserole

Place frozen potatoes in bottom of buttered 3 quart casserole
- 1 package (2 lbs.) frozen hash browns
- 8 oz. sour cream
- 8 oz. cheese grated
- 1 can cream of chicken soup
- 1 Tbsp. onions, minced
- 1 tsp. salt
- Pepper
- 1/2 cup butter
- 1 1/2 cup cornflakes, crushed
Chicken Taquitos

Heat ½" oil in a sauce pan on medium heat
- 3 cups cooked shredded chicken
- 6 ounces ounces cream cheese, softened
- 1/3 cups sour cream
- 1/2 cups salsa
- 1 1/2 cups colby jack cheese
- 1 1/2 cups chopped baby spinach, stems removed
- 12 6 inch corn tortillas
- vegetable or canola oil, for frying
