Baked Zucchini with Parmesan

Preheat oven to 400 degrees
- 4 small zucchini, washed and halved lengthwise
- 1 tablespoon olive oil
- Salt and pepper
- 1/3 cup freshly grated Parmesan cheese
- 2 garlic cloves, minced
Barbecued Country Ribs

Place ribs in an 11 x 7 x 2-inch baking dish coated with cooking spray
- Sauce ingredients:
- 2 1/2 lbs. Boneless country-style ribs
- 2 teaspoons Liquid Smoke, optional

- 1 (1 ounce) envelope dry onion soup mix
- 2 pounds red potatoes, halved

Veal Marsala

Shepherd's Pie Knife and Fork Burgers

- 2 tablespoons olive or vegetable oil, plus some for drizzling
- 1/4 pound button mushrooms, 5 to 6, stemmed and very finely chopped
- 1 carrot, very finely chopped
- 1 rib celery, very finely chopped

- 2 to 3 cloves garlic, very finely chopped

- 2 large or 3 medium russet potatoes, peeled and cubed

Pan Seared Garlic Butter steak & Mushroom

Before cooking, allow steaks to stand 30 minutes at room temperature
- Sauce:
- 4 7-oz. 1-inch thick NY strip steaks
- 1 pinch of salt
- 1 pinch of cracked pepper
- 2 tablespoons olive oil, divided
- 4 tablespoons butter, divided
- 6 garlic cloves lightly crushed with the back of a knife, divided
- 6 - 8 thyme sprigs, divided (or rosemary or parsley)
- 2 cloves garlic crushed
- 1-2 teaspoons Worcestershires sauce
- 1 cup sliced brown mushrooms
- 1/2 cup light cream or heavy cream
Onion Soup
