Banana Nut Bread (cake mix)

Preheat oven to 350 degrees
- 1 (4 oz.) package cream cheese, softened
- 2 large eggs
- 3 medium bananas, peeled and mashed
- 1 Duncan Hines Yellow Cake mix
- 3/4 cup chopped nuts
Lobster Bisque (Slow Cooker)

My lobster tails were not very big
- 2 Shallots, Finely Minced
- 1 Clove Garlic, Finely Minced
- 2 (14.5 Oz.) Cans Petite Diced Tomatoes, With Juice
- 1 (32 Oz.) Carton Low-Sodium Chicken Broth
- 1 Tablespoon Old Bay Seasoning
- 1 Teaspoon Dried Dill
- 1/4 Cup Fresh Parsley, Chopped
- 1 Teaspoon Freshly Cracked Black Pepper
- 1/2 Teaspoon Paprika
- 4 Lobster Tails
- 1 Pint Heavy Cream
- Notes: You may substitute half of a mild onion for the shallots if you cannot find shallots. You may also use less cream or substitute half and half for the cream for less fat.
Lasagna

Cook beef, onion and garlic in saucepan until browned
- 1 lb. ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 29 oz. can tomato sauce
- 1 cup water
- 6 oz. can tomato paste
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1 (8 oz.) package lasagna noodles, uncooked
- 4 cups (16 oz.) shredded mozzarella cheese
- 1 1/2 cups (12 oz.) small curd cottage cheese
- 1/2 cup grated Parmesan cheese
Shrimp Dip, Hot

Preheat oven to 350 degrees
- 1 (8 oz.) package cream cheese, softened
- 1 cup mayo
- 1/2 cup shredded mozzarella cheese
- 3 garlic cloves, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice
- 1/4 teaspoon hot sauce
- 1/2 lb. frozen salad shrimp, thawed
- 1/2 cup sliced scallion
Chicken and Noodle Crockpot

Salt and pepper chicken breasts and place in bottom of crock pot
- 24 oz. package frozen egg noodles
- 2 cans cream of chicken soup
- 1 stick butter, cut into pieces
- 1 32 oz. chicken broth (may want extra to thin out if too thick)
- mixed vegetables (optional)
- 1 teaspoon Better than Bouillon paste for richer flavor
- 5 small boneless, skinless chicken breasts
- salt and pepper to taste
Beef and Noodle Casserole

Preheat oven to 350 degrees F
- 1 pound ground beef
- garlic to taste
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 cans (8-ounces) tomato sauce
- 8 ounces egg noodles
- 8 ounces sour cream
- 8 ounces cream cheese or 1 1/4 cup cottage cheese
- 1 1/2 cups Cheddar cheese, shredded
Buttermilk Fish Fillets

- 2 lbs. white-fleshed fillets
- 1 cup buttermilk
- 1 cup biscuit baking mix
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/4 cup canola oil, plus more if needed for frying
Shrimp and Zucchini Stir Fry

Reheat rice as label directs
- 4 cups frozen cooked brown rice
- 2 tablespoons canola oil
- 1 lb. (26 to 30 ct.) medium shelled and deveined shrimp
- 2 tablespoons maple syrup
- 1 lb. zucchini, thinly sliced and halved
- 2 teaspoons soy sauce
- 1 bunch green onions, trimmed and thinly sliced
- 1 teaspoon ground ginger
Apple Streusel Muffins

- Topping:
- 1/2 cup chopped walnuts
- 1/4 cup flour
- 3 tablespoons granulated sugar
- 2 tablespoons butter, at room temperature
- 1/4 teaspoon ground cinnamon
- Batter:
- 1 1/2 cups flour
- 1/2 up granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup sour cream
- 1/4 stick butter, melted
- 1 cup diced unneeded apple, preferably a tart apple such as Granny Smith

- 2 1/2 pounds boneless, skinless chicken breasts or thighs, cut into cubes
- 4 tablespoons vegetable oil, divided
- 1 pound fresh mushrooms, sliced (optional)
- 1 large green bell pepper, chopped
- 1 large onion, chopped
- 2-3 cloves garlic, minced
- 1 3/4 cup beef broth (optional)
- 2 envelopes or cubes chicken broth (optional)
- 1 (28-ounce) jar spaghetti sauce or 2 (8 oz.) cans tomato sauce or paste
- 1 (15-ounce) can diced tomatoes or stewed tomatoes, undrained
- 1 teaspoon Italian seasoning (or oregano and/or basil)
