Spiced Beef Corn Bread Cobbler

It's kind of like a Sloppy Joe with a Cheddar and corn bread crust
- 1 meduim onion, chopped
- 4 tbs oil
- 2 garlic cloves, chopped
- 1 lb ground beef
- 1 tsp sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp cayanne
- 1/4 tsp ground allspice
- 1/4 tsp black pepper
- 1/8 tsp ground ginger
- 1 1/4 tsp salt
- 1 15oz can diced tomatoes in juice
- 2/3 cup yellow cornmeal
- 1/3 cup AP flour
- 1 tsp baking powder
- 1/3 cup whole milk
- 1 large egg
- 2 oz grated sharp Cheddar cheese
Nuoc Cham (sauce for vietnamese noodles)

Pound garlic, shallot, chili and sugar to paste in a mortar and pestle, stir together all ingredients
- 2 garlic cloves, minced
- 1 small shallot, minced
- 1 chili, seeded and minced
- 2 tbsp sugar
- 1/4 cup fish sauce
- 1/4 cup lime juice
- 3 tbsp vinegar
- 3 tbsp water
- 1 carrot, shredded

Preheat oven to 400°. Combine brown sugar, oil, and garlic in a food processor; process until finely ground
- 2 tablespoons brown sugar
- 2 tablespoons canola oil
- 8 garlic cloves
- 3 tablespoons lower-sodium soy sauce
- 1/4 teaspoon salt

In frying pan, heat 1 tbsp olive oil over med heat, add crab, garlic & shallot, mix well, set aside
- Mustard:
- 3 tbsp olive oil
- 1/2 cup crabmeat
- 1 tbsp chopped garlic
- 1 tbsp chopped shallots
- 1 tsp butter
- 2 english muffins
- 4 lg eggs
- 2 egg yolks
- 1 tbsp lemon juice
- 2 tbsp dijon mustard
- dash hot sauce
- pinch of Old Bay & pepper

Heat skillet over med-high heat, add oil, cook chicken 3-5 min or until browned
- 2 tbsp veg oil
- 1 1/2 lb boneless chicken thighs, quartered
- 3 tbsp minced fresh ginger
- 2 tbsp chopped onion or shallots
- 1 tbsp minced garlic
- 2 tbsp fish sauce
- 2 tbsp packed lt brown sugar
- 1 tbsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp crushed red pepper
- 1/4 cup water
- 1 cup sliced green onions
