- 2 lb russet potatoes, cut lengthwise into 1/2inch thick sticks

Easy Teriyaki Hand Pies

Preheat oven to 375, grease large cookie sheet
- 1/4 cup packed brown sugar
- 1/4 cup soy sauce
- 1 garlic clove, crushed with press
- 1 tbsp grated fresh peeled ginger
- 1 lb ground pork or ground chicken
- 2 green onions, thinly sliced
- 2 med carrots, shredded
- 1 tube (16.3oz) extra-large refridgerated buttermilk biscuits
Grilled Jerk Shrimp Orzo Salad

Carefully peel back the corn husk to remove the silk and brush the corn with oil
- Dressing:
- 1 large ear of corn in the husk
- 1 tsp olive oil
- 1/3 cup uncooked orzo pasta
- 6 fresh asparagus spears
- 1/2 lb raw medium shrimp, peeled and deveined
- 1 tbsp carribean jerk seasoning
- 1 small sweet red pepper, chopped
- 2 tbsp white vinegar
- 1 tbsp water
- 1 tbsp lime juice
- 1 tbsp olive oil
- 1/8 tsp salt
- 1/8 tsp pepper
Huevos Rancheros

- cherry tomatoes
- 1 sm onion
- 1 jalapeno, chopped
- 2 garlic cloves, 1 chopped, 1 smashed
- 1/2 tsp hot sauce
- 1 1/2 tsp sugar
- 1 tsp cumin
- 2 tbsp + 2 tsp olive oil
- Trader Joe's Cuban beans
- 4 lg eggs
- 4 6-inch corn tortillas, warmed
- 1/2 cup feta cheese
- 1/4 cup chopped cilantro
- avocado, diced
- lime, juice for garnish
Brown Suger Glazed Beets

Combine brown sugar, orange juice, butter, salt and pepper in a large nonstick skillet
- 3 tbsp dark brown sugar
- 2 tbsp orange juice
- 1 tbsp unsalted butter
- 1/4 tsp salt
- 1/4 fresh ground pepper
- 3 cups steamed, cubed beets 1/2 - 1 inch cubes
Chicken with Figs and Blue Cheese

In a small bowl, stir together broth, vinegar, orange zest, and 1/4 tsp each salt and pepper
- 1 1/2 cups chicken broth
- 1/4 cup balsamic vinegar
- 1 tbsp grated orange zest
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 8oz package dried mission figs, stems removed
- 2 tbsp veg oil
- 2 lbs boneless, skinless chicken thighs
- 1 large onion, thinly sliced
- 2 tbsp flour
- 1 16 oz tube prepared polenta
- 2/3 cup crumbled blue cheese
Turkey Salad with Cranberries and Pecans

We serve this over a bed of spinach instead of the lettuce leaves
- 2 cups diced turkey breast
- 1 small Grannysmith apple, peeled, cored and diced
- 3 tbsp dried cranberries, coarsely chopped
- 2 tbsp chopped pecans
- 1 11oz can mandarin oranges, drained and cut into small sections
- 1/4 cup fat free plain yogurt
- 1 tbsp reduced fat mayo
- 1 1/2 tsp brown mustard
- 1/2 tsp salt
- Fresh ground black pepper
- 8 Boston lettuce leaves
