Eggplant Parmigiana 2

For the sauce: In a large skillet, heat the olive oil
- The Sauce:
- 1/4 cup extra-virgin olive oil
- 6 cloves garlic, peeled and pressed or grated
- 3 medium yellow onions, peeled, halved and cut into thin slices
- Kosher salt
- 1 tablespoon red pepper flakes
- 1 tablespoon granulated sugar
- Three 28-ounce cans whole San Marzano plum tomatoes
- The Eggplant:
- 2 medium eggplants (about 2 1/2 pounds total), washed and cut into 1/2-inch-thick rounds
- Kosher salt
- 1 cup all-purpose flour
- 5 large eggs
- 3 tablespoons whole milk
- 5 cups Italian-style breadcrumbs
- 1 tablespoon dried oregano
- 1 tablespoon fresh thyme leaves
- Vegetable oil, for frying, as needed (1 1/2 to 2 cups)
- 1 1/2 pounds mozzarella, cut into thin slices (or torn into thick slices)
- 1/2 cup grated Parmesan,
- 1/2 cup grated provolone

- 1 2/3 cups sugar

- 6 green bell peppers
- 1 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 1 clove garlic, crushed
- 1 teaspoon dried leaf oregano
- 1/2 teaspoon dried leaf basil
- 2 teaspoons salt, divided
- 1/2 teaspoon ground black pepper, divided
- 1 egg, lightly beaten
- 1 1/2 teaspoons Worcestershire sauce
- 1 1/2 pounds lean ground beef or chuck
- 1 1/2 cups cooked long-grain rice
- shredded mild Cheddar cheese, about 1/2 to 3/4 cup, optional

- 1 1/2 pounds ground beef

- 1 cup PACE picante sauce
- 1 1/2 teaspoons ground cumin
