Pasta e Fagioli

1.Place navy beans, ham bone, and 10 cups of water into a large saucepan or Dutch oven
- 1 (16 ounce) package dried navy beans
- 1 (10 ounce) meaty ham bone or smoked pork hocks
- 10 cups water
- 1 (8 ounce) box elbow macaroni
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- Fresh rosemary, chopped to taste (3 sprigs)
- Fresh Thyme (4 sprigs)
- 1 (16 ounce) can diced tomatoes
- 2 stalks celery, diced
- 1 carrot, diced
- 1/2 teaspoon red pepper flakes, or to taste
- 1 cup water
- salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Beef Braciole

1.Place each slice of beef between 2 sheets of plastic wrap and pound with a meat pounder until 1/4 inch thick
- 1 lb boneless beef round, cut into 4 thin slices approximately 1/3 inch thick
- 4 slices of prosciutto
- 1 tablespoon pignoli beans(pine nuts)
- 2 tablespoons grated pecorino romano cheese
- 2 garlic cloves, chopped
- 2 tablespoons parsley, chopped
- 1/2 cup olive oil
- 2 28oz cans imported Italian tomatoes
- 1/4 cup tomato puree
- 2 bay leaves
- 3 fresh basil leaves, torn into small pieces
- 1 medium yellow onion, chopped fine
- 2 carrots, peeled and chopped fine
- 2 celery stalks, chopped chopped fine
- 1 cup dry red wine
- flour spread on a plate for dredging
- salt & pepper to taste
Bapple Bread

Preheat oven to 350°F. Coat a 9" x 5" loaf pan with cooking spray
- 4 ripe bananas
- 1 cup sugar
- 1/2 cup applesauce
- 2 eggs
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
Grilled Lime Shrimp

Mix together the first 8 ingredients in a bowl
- 1/2 teaspoon fresh lime zest
- 1/4-1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/2-1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 2 -3 tablespoons fresh squeezed lime juice
- 3 cloves garlic, minced
- 1 lb shelled deveined uncooked shrimp
Spaghetti with a “Light Mushroom & Scallion Alfredo”

Heat the griddle and place mushrooms, scallions, parsley and garlic on the griddle with a drizzle of olive oil
- Sauce:
- 1 box of your favorite spaghetti
- 1 bunch of scallions – cut in medium pieces
- 4 cloves of garlic – chopped
- 1 quart of button mushrooms – sliced
- 1 bunch of Italian parsley – chopped
- Olive oil
- 3 cloves of garlic – chopped
- 4 pats of butter
- 1/2 cup of milk
- 1/2 cup of grated Romano cheese
- Dashes of fresh ground black pepper
Beef Stroganoff

Prepare noodles as directed
- 1 to 1/2 pounds Ribeye tenderized
- 1/2 cup flour
- 1/2 cup Olive oil
- 2 tablespoons butter
- 1 package egg noodles
- 2 cans cream of mushroom soup
- 1/2 beef stock
- 1 pound sliced baby portobella mushrooms
- 6 oz sour cream
Brussels Spouts with Onions and Bacon

In a heavy-bottomed pot over medium heat, fry the bacon until crisp
- 1/2 pound lean bacon, finely diced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 pounds Brussels sprouts, trimmed
- Salt and freshly ground black pepper
- 2 cups chicken broth
- 4 tablespoons butter

- 1/2 cup fresh white breadcrumbs
- (1/3 cup) milk
- 2 pounds mild & hot Italian sausage
- 1/2 small onion, chopped
- 1 egg, plus 1 egg extra, lightly beaten
- 1/4 cup Ketchup
- 1/4 cup Mustard
- 2 teaspoons Worchirsere sauce
- 1 teaspoon fennel seed
- 1 teaspoon parsley
- 2 sheets frozen puff pastry, just thawed
Black Pepper and Molasses Pulled Chicken Sandwiches

1. Combine first 9 ingredients in a medium saucepan; bring to a boil
- 3 tablespoons ketchup
- 1 tablespoon cider vinegar
- 1 tablespoon prepared mustard
- 1 tablespoon molasses
- 3/4 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon ground ginger
- 12 ounces skinless, boneless chicken thighs, cut into 2-inch pieces
- 4 (2-ounce) sandwich rolls, cut in half horizontally
- 12 dill pickle chips
Easy Rice Bake Casserole

- 2 tablespoons butter, plus more for dish
- 1 small onion, minced
- Pinch cayenne pepper
- 1 package frozen spinach**, thawed, drained and chopped
- 1 cup milk
- 2 eggs
- 2 cups shredded sharp Cheddar, plus extra for top
- 4 cups cooked rice
- 1 teaspoon freshly chopped parsley leaves
- 1 teaspoon freshly chopped thyme leaves
- 1 teaspoon chopped basil leaves
- Salt and freshly ground black pepper
