Buffalo Chicken Dip

1. Preheat the oven to 350°F
- Serves 16
- Ingredients
- 8 ounces tub-style reduced-fat cream cheese
- 2 tablespoons light mayonnaise
- 1/2 cup low-fat buttermilk
- 6 tablespoons hot wing sauce (like Frank’s Red Hot Wings)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups shredded cooked chicken
- 1/2 cup finely grated carrot
- 1/3 cup finely diced celery
- 1/3 cup crumbled or grated blue cheese (about 1 ounce)
- 2 green onions, finely chopped
Tomato Crostini

Preparation: Halve the tomatoes horizontally
- 6 vine-ripe tomatoes
- 1 garlic clove
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 cup extra virgin olive oil
- 3 Tbsp tomato paste
- 1 ciabatta bread loaf
- 2 Tbsp chopped fresh parsley, for garnish (optional)
Batter Fried Corn Dogs

To make the dipping sauces, mix together the ingredients for each sauce (in separate bowls) until well combined
- Corn Dogs:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 tsp. salt
- 1/4 tsp. onion powder
- 1/4 cup white sugar
- 1 tsp. ground cayenne pepper
- 1 tsp. smoked paprika
- 4 tsp. baking powder
- 1 egg
- 1 cup milk
- Vegetable oil, for frying
- 1 package (8 pieces) beef frankfurters
- Eight 8-inch wooden skewers (if skewers are thin, use two per corn dog)
- Spicy Ranch Dipping Sauce:
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1 package ranch dressing mix
- Hot sauce, to taste
- 2 Tbsp. fresh parsley, chopped
- Chili Mustard Dipping Sauce:
- 1/2 cup Dijon mustard
- 1/2 cup mayonnaise
- 1 Tbsp. chili powder
- 1/4 tsp. garlic powder
- 1/2 tsp. honey
- 1 Tbsp. cider vinegar
- 1 Tbsp. green onion, finely chopped
Cheesy Veggie Manicotti

- 1 cup medium-diced red pepper
- 1-1/2 cups medium-diced red onion
- 2 cups medium-diced zucchini
- 2 cups medium-diced yellow squash
- 2 cups medium-peeled eggplant
- 2 cloves garlic, thinly sliced
- 3 Tbsp olive oil
- 2-1/2 tsp salt, divided
- 1-1/4 tsp black pepper, divided
- 1-1/2 tsp Italian seasoning
- 1/2 cup Ricotta
- 1 egg, slightly beaten

- 1 (19-oz) can black beans, well drained
- 1 cup cooked brown rice
- 1/3 cup loosely packed cilantro leaves
- 1/2 tsp garlic powder
- 1/4 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/4 tsp ground cumin
- 1/2 tsp light chili powder
- 1/4 tsp dry ground oregano
- 1 large egg
- 1/4 large green bell pepper, chopped
- 1/4 medium yellow onion, peeled and chopped
- 1/4 cup unseasoned breadcrumbs
- 1 Tbsp vegetable oil, for cooking
- Hamburger buns (optional, for serving)

- Salsa:
- 1/8 red onion, peeled
- 1/3 cup loosely packed cilantro
