- 6 eggs, beaten
- 3/4 cup milk
- 3/4 cup heavy cream
- 1/4 cup Dijon mustard
- 3 tsp hot sauce, divided
- 3 tsp salt
- 1 tsp black pepper
- 2 (16.3-oz) cans refrigerator biscuits, cut into fourths
- 1-1/2 cups cheddar cheese, grated and divided
- 1-1/2 cups Swiss cheese, grated and divided
- .5 lb deli-sliced ham, large dice and divided
- 1 cup, plus 2 Tbsp, scallions, sliced and divided
- 1 cup mayonnaise
- 2 Tbsp lemon juice
- 1/2 Tbsp water

- Ingredients:
- 1 cup apple butter
- 2 Tbsp whole grain mustard
- 3 Tbsp apple cider vinegar
- 1/2 cup ketchup
- 1 Tbsp Worcestershire sauce
- 1 tsp garlic powder
- 2 tsp fresh lemon juice
- 2 (14-oz) packages miniature smoked sausages, drained
Strawberry Shortcake Trifle

PREPARE cake batter and bake as directed on package for 2 (9-inch) round cake layers
- 1 pkg. (2-layer size) white cake mix
- 4 cups fresh strawberries, sliced
- 2 Tbsp. sugar
- 1/3 cup strawberry jam
- 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
- 1-1/2 cups cold milk
- 1-1/2 cups thawed COOL WHIP Whipped Topping
Fried Egg and Ham Sandwich

- 8 slices of white sandwich bread
- 4 tablespoons butter, at room temperature
- 4 large eggs
- 1/2 pound sliced pre-cooked ham
- 1/4 pound sliced Yellow Cheddar cheese
- 8 slices of tomatoes
Mock Mascarpone Crostini

Preheat the oven to 400 degrees F
- Mock Mascarpone:
- 1 baguette, thinly sliced
- Olive oil, for brushing and drizzling
- Kosher salt
- Mock Mascarpone Cheese, recipe follows
- Roasted red peppers, peeled and sliced
- Fresh basil leaves, chiffonade
- 8 ounces cream cheese, at room temperature
- 2 tablespoons vanilla Greek yogurt
- 1/4 teaspoon vanilla extract
- In a small bowl, cream together the cream cheese, yogurt and vanilla extract with a mixer until well blended. Refrigerate if a firmer texture is desired. Use in recipes as an inexpensive alternative to mascarpone.
Pork Tenderloin with Apples

- 2 (1 to 1-1/2 lb) pork tenderloins
- 2 Tbsp vegetable oil
- 1-1/2 tsp salt, or to taste
- 2 apples, cored and sliced thick (I like Granny smith)
- 2 yellow or Vidalia onions, sliced
- 1 Tbsp Dijon mustard
- 1/4 tsp ground black pepper
- 1 Tbsp chopped fresh thyme leaves, divided
- 1 cup chicken stock or white wine
- 1 Tbsp butter
