Garden Vegetable Mac and Cheese

Preparation: Preheat the oven to 375°F
- 1/2 lb dry penne pasta, cooked according to package directions
- 5 Tbsp butter, divided
- 3/4 cup panko breadcrumbs
- 1 Tbsp fresh chopped parsley
- 2 Tbsp fresh chopped basil
- 1 –1/2 tsp salt, divided
- 1/2 tsp black pepper, divided
- 1 tsp minced garlic
- 1/2 cup medium diced onions
- 1/2 cup medium diced carrots
- 1 cup broccoli florets
- 1/2 cup diced zucchini
- 1/2 cup corn
- 1/2 cup roasted peppers
- 2 –1/2 Tbsp flour
- 1 –1/2 cup milk
- 1 cup grated dill Havarti cheese
- 2 cups grated Monterey Jack cheese
- 3 beefsteak tomatoes, sliced 1/4" thick (about 10–12 slices)
Root Beer Float Pie Recipe

Set aside and refrigerate 1/2 cup whipped topping for garnish
- 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
- 3/4 cup cold diet root beer
- 1/2 cup fat-free milk
- 1 package (1 ounce) sugar-free instant vanilla pudding mix
- 1 graham cracker crust (9 inches)
- Maraschino cherries, optional
Quiche Lorraine

Combine flour and salt in a bowl
- CRUST:
- 2 cups sifted all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup butter-flavored shortening
- 3 to 4 tablespoons cold water
- FILLING:
- 12 bacon strips, cooked and crumbled
- 4 eggs
- 2 cups half-and-half cream
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1-1/4 cups shredded Swiss cheese
Apple Cinnamon Fritters

In deep fryer or 4-quart heavy saucepan, heat oil to 350°F
- Vegetable oil for deep frying
- 2 cups Original Bisquick® mix
- 1/2 cup cold water
- 1 egg
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 large unpeeled Granny Smith apple, chopped (about 1 3/4 cups)
- 1/4 cup powdered sugar
Build-Your-Own Ramen

Cook the ramen noodles according to their package directions
- 4 (3-oz) pkg dry ramen noodles, spice packet discarded
- 2 tsp vegetable oil
- 2 Tbsp sesame oil
- 2 Tbsp ginger, minced
- 1-1/2 Tbsp garlic, minced
- 3/4 cup scallions, sliced
- 1 cup carrots, thinly julienned
- 1 cup shiitake or white button mushrooms, thinly sliced
- 3 cups Napa cabbage, chopped
- 6 cups water
- 1/2 cup white miso paste
- 2 Tbsp soy sauce
- 1 cup frozen corn
- 1 cup shelled edamame
- 4 cups baby spinach, chopped large
- 1 (5-oz) can sliced water chestnuts, chopped
- 2 cups snow peas, halved width-wise
Scrambles Breakfast Ring

1 Heat oven to 375°F
- 1 bag (7.7 or 8 oz) Pillsbury® Egg Scrambles™ frozen egg scramble (any flavor)
- 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
- 1/4 cup shredded mozzarella cheese (1 oz)
- 1 egg, beaten
- 1/2 teaspoon poppy seed
Cashew Chicken Soba Noodle Salad

To start the salad, cook the soba noodles and place them in a large mixing bowl
- Dressing:
- 1 (10.58-oz) bag dry soba noodles, cooked according to package directions and cooled
- 1-1/2 lbs chicken breast, cut into 1.5"–2" thin strips
- 1-1/2 tsp salt
- 3/4 tsp black pepper
- 1-1/2 Tbsp cornstarch
- 3 Tbsp oil
- 2 cups snow peas, julienned
- 1 cup carrots, julienned
- 1 cup red pepper, julienned
- 1 cup yellow pepper, julienned
- 1 (8-oz) can water chestnuts, chopped
- 2 cups frozen shelled edamame, defrosted
- 2 cups cabbage, thickly shredded
- 1/2 cup scallions, sliced
- 2 cups roasted cashews
- 1/3 cup, plus 2 Tbsp, rice wine vinegar
- 1/4 cup soy sauce
- 1/8 cup sesame oil
- 3/4 tsp Dijon mustard
- 1/4 cup ginger, minced
- 1-1/2 tsp garlic, minced
- 1 Tbsp honey
- 1/4 cup lime juice
- 3/4 cup vegetable oil
- 2 Tbsp wasabi paste
- 3/4 cup cilantro, chopped
Easy Banana Bread

HEAT oven to 350ºF. BEAT egg, dressing and bananas in large bowl with whisk until well blended

- 1-1/3 cups mashed fully ripe bananas (about 3)
- 1-1/2 cups flour
- 1 cup sugar
- 1/2 cup chopped PLANTERS Walnuts

BANANA CUPCAKES

In a large bowl, beat cake mix, bananas, water, oil, eggs, and extract with hand mixer on low for 30 seconds

- 1 cup mashed bananas
- 1/3 cup water
- 1/3 cup oil

Lasagna "Cupcakes"

Preheat oven to 375 degrees
- 1/3 pound ground beef (ground turkey or Italian sausage can be used)
- Salt and pepper
- 1 1/2 cups marinara sauce (homemade or store-bought)
- 24 small, square wonton wrappers
- Non-stick spray
- 1 3/4 cups (7 oz.) Parmesan cheese (I used shredded, but powdered/grated works, too)
- 1 3/4 cups (7 oz.) mozzarella cheese, shredded
- 3/4 cup (or so) ricotta cheese
- Basil or parsley, for garnish (optional)
