  • What You’ll Need:
  • 1 bell pepper
  • 2 stalks of celery
  • 1/2 cup chopped tomatoes
  • 1 portobello mushroom
  • 1 avocado
  • 2 green onion
  • 1 cup of beans or grains
  • 1/4 cup of mixed nuts and seeds
  • 2 large handfuls of mixed greens
  • Dressing:
  • 2-3 tbsp. extra virgin olive oil
  • 1/2 tsp. grainy dijon mustard
  • 1 tsp. balsamic vinegar
  • 1/2 tsp. turmeric
  • Sea salt & black pepper to taste
  • Chop up all the veggies and fruit into bite size pieces and divide into two mason jars, in this order:
  • Add dressing
  • Add hard veggies and fruit (carrots, peppers, celery)
  • Add beans, legumes, and hard grains
  • Add soft veggies and fruit (avocado, tomato, mushroom)
  • Add greens!
