BRUSCHETTA ZUCCHINI CRISPS

1. After you have preheated the oven to 450°F, slice the zucchini into 1/4" rounds
- 1 large zucchini
- 1 Tbsp salt
- Olive oil, to drizzle
- 1/4 cup Parmesan cheese
- 1/4 cup Panko bread crumbs
- A dash of Italian seasoning (optional)
- Pepper, to taste
- 4 small to medium-sized tomatoes
- 1/2 sweet onion
- 1 Tbsp fresh oregano
- 2 tsp fresh parsley
- 1 tsp fresh basil
- 1 small package fresh Mozzarella

- 1 pounds chicken, breast, boneless, skinless
- 1 package(s) taco seasoning mix, low sodium
- 1 can(s) beans, black, no-salt-added
- 1 1/2 cup(s) corn, frozen
- 3/4 cup(s) pepper stir-fry vegetables (onions and green, red and yellow peppers)
- 3/4 cup(s) water
- 3/4 cup(s) cheese, cheddar, reduced-fat, shredded
Pizza Pasta Salad

COMBINE ingredients. REFRIGERATE 1 hour
- 3 cups penne pasta, cooked, rinsed
- 4 tomatoes, chopped
- 12 slices OSCAR MAYER Hard Salami, chopped
- 1 cup KRAFT Finely Shredded Italian* Five Cheese Blend
- 1/2 cup sliced fresh basil
- 1/2 cup KRAFT Grated Parmesan Cheese
- 1/2 cup KRAFT Tuscan House Italian Dressing
BOURBON-APPLE CHEDDAR CROSTATA

- Ingredients:
- Dough and Filling:
- 1 pack store-bought pie dough (2" x 9" round rounds)
- 1/2 cup sharp white cheddar cheese
- 4 cups Granny Smith apples, peeled and sliced into 1/4" pieces
- 1 orange, zest only
- 1 lemon, zest only
- 1 Tbsp orange juice
- 2 Tbsp flour
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp allspice
- 2 Tbsp butter, chilled and diced
- 2 Tbsp heavy cream
- Topping:
- 1/4 cup all-purpose flour
- 1/4 cup dark brown sugar
- 1/4 cup butter, chilled and grated
- Bourbon Toffee:
- 1 cup heavy cream
- 1 cup dark brown sugar
- 1/4 cup bourbon
- For Serving:
- Ice cream or whipped cream
Frozen Summer Sangria

Place the ingredients into a blender and blend for 45–60 seconds, or until the drink is completely smooth
- 6 oz frozen mango chunks
- 3 oz frozen peach slices
- 3 oz frozen pineapple chunks
- 4 cups ice
- 1/2 a lime, peeled
- 1 orange, peeled and halved
- 1-3/4 cup white wine
- 1/2 cup brandy
- 1/4 cup sugar
SKILLET ROASTED LEMON CHICKEN

- Ingredients:
- 4 –6 lb whole chicken
- 1 stick unsalted butter, softened
- 1-1/2 tsp lemon pepper seasoning
- 2 tsp fresh thyme, chopped, plus 3 sprigs
- 1 sprig fresh rosemary
- 1 garlic bulb, cut in half crosswise
- 2 lemons, halved and divided
- Salt and pepper, for seasoning
- 2 Tbsp oil
- 1 small onion, cut into 8 wedges

Ham Salad Lettuce Wraps

In a medium mixing bowl, stir together the mayonnaise, mustard, basil, garlic, and black pepper

- 1 Tbsp Dijon mustard
- 1-1/2 Tbsp basil, thinly julienned
- 1/2 tsp garlic, minced
- 1 tsp black pepper
- 1 (8 oz) ham steak, small to medium dice
- 1 cup frozen peas, defrosted
- 3 plum tomatoes, cut in half lengthwise, seeds removed, and small to medium dice
- 3/4 cup cooked bacon, chopped
- 1-1/2 cups extra-sharp yellow cheddar cheese, shredded
- 1 –2 heads iceberg, romaine, or butter lettuce (enough for 16 lettuce leaves)
