HERBY EGGS WITH BASIL, THYME AND CHIVES

Heat butter in skillet over medium heat
- 1 Tblsp butter
- 2-3 large eggs
- 1 tsp. chopped chives
- 1 tsp. chopped fresh basil leaves
- 1 tsp. chopped frsh thyme leaves
- Salt and pepper
ONE POT BEEF CABBAGE

Here Are The Instructions 1
- 2 lbs ground beef
- Salt and pepper or creole seasoning
- 1 onion, chopped
- 1 cup rice, uncooked
- 3 large handfuls of roughly chopped cabbage
- 1 8 oz. can tomato sauce
- 2 cups of water
- 1 14 oz. can diced tomatoes, undrained (or Rotel if you want a bit spicy)
- 1 cup shredded cheese (Colby Jack or your favorite)
White Baked Penne with Kale

Season kale with salt, pepper, olive oil, and maybe some red pepper flakes
- 1 small bunch fresh kale (about 1 lb or so), cleaned, with tough stems removed, and torn into bite-sized pieces
- 1/2 lb whole wheat penne, cooked and cooled
- 2 – 2 1/2 cups ricotta
- 6 cloves garlic: 3 smashed, 3 minced; or more, if you like it
- large handful of grape or cherry tomatoes, halved
- 1 egg
- 1 cup Locatelli cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup fresh flat-leaf parsley, chopped
- 1 tsp. olive oil
- salt
- pepper
- pinch of red pepper flakes
- 1/3 cup breadcrumbs
