EASIER FRIED CHICKEN

Serves 4 A whole 4-pound chicken, cut into eight pieces, can be used instead of the chicken parts
- 1-1/4 cups buttermilk
- Salt and pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Dash hot sauce
- 3-1/2 pounds bone-in chicken pieces (split breasts cut in half, drumsticks, and/or thighs), trimmed
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1-3/4 cups vegetable oil
Ham Loaf with Mashed Sweet Potato Topping

- 2-1/2 lbs ground pork
- 3/4 lb ham, finely ground in a food processor
- 1 cup bread crumbs
- 3 eggs, slightly beaten
- 3/4 cup minced onions
- 2 tsp minced garlic

- 1-1/2 tsp black pepper
- 1 Tbsp Dijon mustard
- 1 Tbsp orange zest
- 2 tsp chopped sage
- 2 lbs sweet potatoes, peeled and cut into 1” pieces
- 1/4 cup heavy cream

- 1 lb. penne pasta
- 2 cups whole milk
