- 4 cans San Marzano tomatoes
- 1/2 cup olive oil, divided
- 1-1/2 cups onion, medium dice
- 2 pork ribs, optional
- 5 cloves garlic, sliced
- 2 tsp salt
- 1-1/2 tsp pepper
- 1 basil sprig with leaves
- 1/2 tsp red pepper flakes
- 1 Tbsp oregano, chopped
- 2 Tbsp parsley, chopped
- Meatballs:
- 3 lbs medium-grind ground beef brisket (ask your butcher)
- 1/2 cup onion, small dice
- 2 tsp garlic, chopped
- 1/4 cup Parmesan, grated
- 1/2 cup breadcrumbs
- 2 egg yolks
- 2 Tbsp basil, chopped
- 2 Tbsp parsley, chopped
- 2 tsp salt
- 1-1/2 tsp pepper
- 3 Tbsp olive oil
