- 1 small onion, finely chopped
- 1 red bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1/3 cup ketchup
- 1/2 cup grated carrot
- 1 teaspoon dried basil
- 2 large tomatoes, diced
- One 10-ounce can tomatoes with chiles, such as Rotel
- 3 cups sliced fresh string beans, in 1/2-inch pieces
- Salt and pepper
- Rice, for serving
Dessert Island Parfait

Cook's Note: For toasted coconut, just cook shredded coconut in a dry skillet until lightly browned
- 3 drops coconut extract
- 1 (6-ounce) container fat-free vanilla yogurt
- Half a banana, sliced into coins
- 1/4 cup chopped mango
- 2 tablespoons fat-free whipped topping (from an aerosol canister), or more for optional topping

Melon Carpaccio with Prosciutto

Preparation: Chill 2 serving plates in the freezer until ready to plate
- 1/2 cantaloupe or honeydew melon, chilled; or 1/4 of a seedless watermelon, chilled
- 1 Tbsp sherry vinegar
- 1 Tbsp extra virgin olive oil
- 1/2 Tbsp honey
- 1 oz thinly sliced prosciutto, julienned
- 1 tsp fresh thyme leaves, chopped
- Fresh cracked pepper, to taste

1 Heat oven to 400°F. In 4-quart saucepan, mix 1/3 cup sugar, the cornstarch and cinnamon
- 1/3 cup sugar
- 1 tablespoon cornstarch
- 1/4 teaspoon ground cinnamon
- 6 peaches, peeled, cut into 1/2-inch slices (6 cups)
- 2 tablespoons water
- 2 teaspoons lemon juice
- 1 cup Original Bisquick™ mix
- 2 tablespoons sugar
- 1/3 cup milk
- 1 tablespoon butter or margarine, melted
- Sweetened whipped cream, if desired
David's Baked Corn Casserole

In a large bowl, combine all ingredients and mix thoroughly

- 1 box corn muffin mix
- 14 oz can creamed corn
- 2 cups fresh corn (cut from the cob) OR 14 oz can whole kernel corn (drained)
- 1 stick butter (softened)
- 1 cup sour cream
- 1 egg
Roasted Brussels Sprouts with Apples and Bacon
