- coarse-cut orange marmalade (2/3 cup), divided
- 12 tablespoons unsalted butter, softened, plus 1/2 tablespoon for glaze, and more for greasing pan
- sugar (3/4 cup)
- 2 teaspoons grated lime zest
- 1/2 teaspoon grated orange zest
- 3 large eggs, at room temperature
- 2 tablespoons fresh orange juice
- all-purpose flour (1 1/2 cups)
- baking powder (1 1/2 teaspoons)
- fine sea salt (3/4 teaspoon)
- confectioners’ sugar (4 tablespoons)

1) in bowl, whisk oil, juices and zest 2) toss remaining ingredients and add dressing; toss again

Set the Instant Pot (or alternative pressure cooker) to sauté
- 1 medium brown onion, diced
- 3 cloves garlic, minced
- 1 lb organic turkey minced
- 1 can (14.5oz ) diced tomatoes
- 1 can (14.5oz ) tomato sauce
- 1 can (14.5oz ) chick peas (garbanzo beans), drained
- 1 1cm red bell pepper, chopped into rough 1cm squares
- 1 1cm sweet potato, peeled and chopped into rough 1cm squares
- 1 cup vegetable stock
- 1 tsp cumin
- 1 tsp paprika
- 1/2 1/2 chilli powder (more or less depending on taste. I find 1/2 tsp is good for kids)
- to and pepper to taste
- to brown rice, chilli flakes, diced avocado, sour cream, grated monterey jack cheese and cilantro to serve
