Peel orange and cut peel into strips
- 1 large organic orange
- 1 bag fresh cranberries
- 2/3 cup sugar
- 3 tablespoons butter
- 1 onion, finely chopped
- 1 rib celery with leafy tops, finely chopped
- 1 small carrot, peeled and grated or finely chopped
- 1/4 cup dry sherry or white wine
- 1/4 cup chopped hazelnuts

- For the Filling:
- 12 ounces Pan di Stelle (or any chocolate cookies) plus a few extra to decorate
- 4 ounces butter (melted and cooled about 5 minutes)
- 13 ounces Nutella
