Basil Marinated Cherries: Cut cherries in half, removing seed, and place in large jar or medium bowl
- 2 pounds cherries
- 1 cup basil (thinly sliced)
- 1/8 cups sugar
- 1/2 cups ricotta
- 1/2 teaspoons vanilla
- 8 slices whole grain bread
SHRIMP WITH COCONUT MILK

- 1 pound shrimp shelled, deveined (about 26-30 count to the pound)
- 1 tablespoon ginger minced
- 1 tablespoon garlic minced
- 1/2 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1 teaspoon garam masala
- 1/2 can unsweetened coconut milk
Garlic Chicken with Orzo Noodles

Bring a large pot of lightly salted water to a boil
- 1 cup uncooked orzo pasta
- 2 tablespoons olive oil
- 2 cloves garlic
- 1/4 teaspoon crushed red pepper
- 2 skinless, boneless chicken breast halves - cut into bite-size pieces
- salt to taste
- 1 tablespoon chopped fresh parsley
- 2 cups fresh spinach leaves
- grated Parmesan cheese for topping

1) preheat oven to 350. in bowl mix first 4 ingredients
