Parsnip Carrot Medley

In a Dutch oven, bring the parsnips, carrots and broth to a boil
- 2 pounds parsnips, peeled and sliced
- 1-1/2 pounds carrots, peeled and sliced
- 3/4 cup chicken broth
- 3 tablespoons butter
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon dried rosemary, crushed
- Dash cayenne pepper
Garlic Lemon Shrimp

In a large skillet, saute shrimp in oil for 3 minutes
- 1 pound uncooked large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 garlic cloves, sliced
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 2 tablespoons minced fresh parsley
- Hot cooked pasta or rice
Lemon Bars

Then mix: 3 eggs well beaten 8 oz
- 1 box lemon cake mix
- 1 stick melted margarine
- 1 egg
- 1 tsp. Lemon flavoring
- Mix these ingredients well and place in a greased jelly roll pan. Pat down with hands.
Bacon Wrapped Stuffed Jalapenos

Make a lengthwise cut in each jalapeno, about 1/8 in
- 24 medium jalapeno peppers
- 1 pound uncooked chorizo or bulk spicy pork sausage
- 2 cups (8 ounces) shredded cheddar cheese
- 12 bacon strips, cut in half
Guacamole that Rocks

Mix avocados, drained tomatoes, onion, lemon juice and salt in medium bowl until well blended
- 3 ripe avocados, pitted, peeled and mashed
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
- 3/4 cup chopped onion
- 1 teaspoon lemon or lime juice
- 1/2 teaspoon salt
- Ground black pepper
- Tortilla chips, optional
Ham Delights

Mix margarine, mustard, poppy seeds, Worcestershire sauce and onion
- 1 (8 oz) carton whipped margarine
- 2 tsp prepared mustard
- 2 tbsp poppy seeds
- 2 tsp Worcestershire sauce
- 1 small onion grated
- 2 pkg. Pepperidge Farms party rolls
- 1 (8 oz) pkg sliced cooked ham
- 1 (8 oz) sliced Swiss cheese
Grits Casserole

Crumble sausage into a large skillet
- 1 pound bulk pork sausage
- 4 cups water
- 1 teaspoon salt
- 1 cup quick-cooking grits
- 4 eggs, lightly beaten
- 1-1/2 cups (6 ounces) shredded sharp cheddar cheese, divided
- 1/2 cup milk
- 1/4 cup butter, softened
Bottoms Up Cherry Limeade

In a large bowl, combine lime juice and sugar substitute
- 3/4 cup lime juice
- Sugar substitute equivalent to 1 cup sugar
- 2 liters lime carbonated water, chilled
- 1/2 cup maraschino cherry juice
- 8 maraschino cherries with stems
- 8 lime slices
Corn, Tomato and Pepper Rice

Bring the chicken broth and 1/4 cup of water to a boil
- 1 (14 oz) can chicken broth
- 1 cup uncooked white rice
- 1 (15 oz) can corn, drained
- 1 (14.5 oz) can diced tomatoes, drained
- 1/4 cup drained, chopped Jalapeño peppers
Pumpkin Chip Muffins

- 4 eggs
- 2 cups sugar
- 1 can (15 ounces) solid-pack pumpkin
- 1-1/2 cups canola oil
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 2 cups (12 ounces) semisweet chocolate chips
