- 1-1/2 cups frozen corn, thawed
- 1-1/2 cups (6 ounces) shredded reduced-fat Colby-Monterey Jack cheese, divided
- 1/2 cup finely chopped sweet red pepper

In a large bowl, cream butter and sugar until light and fluffy
- FILLING:
- 3/4 cup butter, softened
- 1-1/2 cups sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (8 ounces) sour cream
- 1/4 cup packed brown sugar
- 1 tablespoon all-purpose flour
- 1/2 teaspoon ground cinnamon
- 2 cups fresh or frozen blueberries
- GLAZE:
- 1 cup confectioners' sugar

- 1 cup sugar
- 1/2 cup cornstarch
- 2-1/2 cups cold water
- 1/8 teaspoon salt
- 3 eggs yolks, lightly beaten
- 3 tablespoons butter
- 2/3 cup lemon juice, divided
- 1 package (8 ounces) cream cheese, softened
- 1 can (14 ounces) sweetened condensed milk
- 1 package (3.4 ounces) lemon-flavored instant pudding mix
- 2 pie shells (9 inches), baked
- Whipped cream
- Lemon slices
