Creole Beef Casserole

In a large bowl, combine the soup, sour cream, onion and pepper
- 2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
- 2 cups (16 ounces) sour cream
- 1 small onion, chopped
- 1/4 teaspoon pepper
- 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
- 2 cups (8 ounces) shredded cheddar cheese
- 1-1/2 pounds ground beef
- 1 cup ketchup
- 1/4 cup packed brown sugar
- 3 teaspoons Creole seasoning
- 1 teaspoon garlic salt
- 1 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 3/4 cup crushed cornflakes
- 1/4 cup butter, melted

Heat oil for frying in large skillet over medium-low heat
- Oil for frying
- 1 cup self-rising flour
- 1 cup self-rising cornmeal*
- 3/4 cup buttermilk
- 2 eggs
- 1/3 cup + 1 tbs water
- 1/4 cup oil or bacon fat
- No self-rising cornmeal? Used 3/4 cup + 3 tbs regular cornmeal, 1 tbs baking powder and 1/2 tsp salt instead.
Crunchy Cherry Party Mix

Place first 4 ingredients in a large bowl
- 4 cups corn or rice Chex
- 2 cups wheat Chex
- 2 cups broken whole grain melba toast
- 2 cups small pretzel twists
- 3 tbsp margarine, melted
- 1 tbsp Worcestershire sauce
- 2 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp. onion powder
- 1/8 tsp cayenne pepper
- 1 1/2 cup dried tart cherries

Melt butter in saucepan over medium heat
- 2 tbsp. butter
- 1 cup packed brown sugar
- 1/8 tsp. salt
- 1/3 cup milk
- 1 tsp. vanilla
- 1 1/2 cups sifted powdered sugar
Strawberry Cheesecake Trifle

In a bowl, toss strawberries with 1/2 cup sugar; set aside
- 2 pints fresh strawberries, sliced
- 1 cup sugar, divided
- 2 packages (8 ounces each) cream cheese, softened
- 3 tablespoons orange juice
- 3 cups heavy whipping cream, whipped
- 1 loaf (10-3/4 ounces) frozen pound cake, thawed and cut into 1/2-inch cubes
- 3 ounces semisweet chocolate, grated
- Chocolate curls and additional strawberries, optional
Beef Stew and Corn Bread

Stew: Mix ingredients together in casserole dish and bake at 250 uncovered for 3 hours
- Stew:
- 1 lb beef, cut into 2" cubes
- 1 (10 oz) can French onion soup, undiluted
- 1 can cream of mushroom soup, undilutes
- Cornbread:
- 1 cup corn meal
- 1 cup flour
- 1/2 tsp salt
- 4 tsp baking powder
- 1 egg
- 1 cup milk
- 1/4 cup shortening
Easy Ground Beef Soup

- 1 lb. hamburger, browned
- 3 cans mixed vegetables
- 2 cans tomato sauce
- 1 small onion, chopped fine
- 2 quarts water
- 1 tbs. Salt

- 1 can (14-1/2 ounces) vegetable broth
- 1/4 cup water
- 2 medium zucchini, halved lengthwise and sliced
- 1 medium yellow summer squash, halved lengthwise and sliced
- 1 cup chopped leeks (white portion only)
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 large tomato, chopped
- 1 tablespoon minced fresh cilantro
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon pepper
- 1/8 teaspoon crushed red pepper flakes
- 2 cups fresh baby spinach, chopped
Vidalia Onion Soup

In a Dutch oven or soup kettle, saute the onions in butter until lightly browned
- 4 to 5 large Vidalia or sweet onions, chopped
- 3 tablespoons butter
- 1/4 teaspoon pepper
- 1 tablespoon all-purpose flour

- 1-1/2 cups water
- 1 bay leaf
- 8 slices French bread, toasted
- 1/2 cup shredded Swiss cheese
