Magic Cookie Bars

Preheat oven to 350 degrees
- 1/2 1/2 1/2 c butter
- 1 1/2 1 1/2 1/2 c graham cracker crumbs
- 14 14 can 14 oz can sweetened condensed milk
- 3 1/2 3 1/2 1/2 oz flaked coconut
- 1 1 1 c chopped nuts
- 6 6 6 oz chocolate chips
Grilled Lime Soy Tuna with Noodles

Combine first 7 ingredients in a small bowl
- 8 tsp fresh lime juice
- 8 tsp less sodium soy sauce
- 4 tsp canola oil
- 4 tsp honey
- 2 tsp minced peeled fresh ginger
- Dash of ground red pepper
- 1 garlic clove, minced
- 2 6 oz. tuna steaks
- 4 oz. wide rice noodles
- 1/4 c matchstick cut carrots
- 4 tsp rice vinegar
- 1 1/2 tsp sesame seeds, toasted
- 1 1/2 tsp dark sesame oil
- 1 tsp mirin
- Cooking spray
- 1 tbsp finely minced green onions
Chanterelle's Chocolate Souffle Cake

Position a rack in the middle of the oven and preheat the oven to 300 degrees F
- 1 lb bittersweet chocolate, chopped
- 1 c unsalted butter
- 9 large eggs, separated
- 3/4 c, plus 1 tbsp sugar
- unsweetened cocoa for dusting
- confectioner's sugar for dusting
Blintzes

Wrap: Mix all ingredients together and refrigerate for 2 hours
- Wrap:
- 1 1/2 c milk
- 2/3 c flour
- 2 tbsp butter
- Salt
- 3 eggs
- Filling:
- 1 egg
- 2 8 oz. packages cream cheese
- 1 8 oz. cottage cheese
- 3 tbsp confectioner's sugar
- 3/4 tsp vanilla
Roast Chicken With Spring Vegetables

Preheat the oven to 500 degrees F
- 3 1/2 pounds skin-on, bone-in chicken quarters
- Kosher salt and freshly ground pepper
- 1 lemon, halved
- 3 tablespoons extra-virgin olive oil
- 1 pound fingerling or other small potatoes
- 2 bunches radishes
- 1 bunch scallions
- 1 bunch baby carrots
- 1/4 cup chopped fresh dill
Broccoli Cheddar Soup

Heat the olive oil in a large pot over medium high heat
- 2 tbsp EVOO
- 1 medium onion, finely chopped
- 2 stalks celery, finely chopped
- 2 c low sodium chicken broth
- 2 c half and half
- 1 lb russet potatoes, peeled and chopped
- 1 lb sweet potatoes, peeled and chopped
- 1 bay leaf
- Kosher salt and freshly ground black pepper
- 2 c chopped broccoli florets
- 1/2 lb sharp cheddar cheese, shredded
- Croutons, for garnish
Shallot Bresaola

Toss shallot, olive oil, rosemary and pinch of salt; set aside for 10 mins
- 1 shallot, thinly sliced
- 3 tbsp olive oil
- 1 tsp chopped rosemary
- Salt
- Softened butter
- Toast rounds
- Bresaola
Cheapskate Salad

Mix all ingredients together and serve
- 2 1/2 c mesclun
- 3/4 c chicken
- 1/4 c bacon bits
- 2 tbsp dried cranberries
- 1/4 c walnuts
- 3 tbsp blue cheese
BBQ Mini Meat Loafs

Combine the first four ingredients
- One 6 oz. pkg stuffing mix
- 1 c water
- 2 tbsp hickory smoked bbq sauce
- 1 lb ground beef
- 1 c shredded cheddar cheese
Muffin Pan Pizza

Heat oven to 375 degrees F and coat a standard 12 cup muffin tin with cooking spray
- 1 c whole wheat flour
- 1/2 c cornmeal
- 1 tsp baking powder
- 2 tsp oregano
- 1 tsp salt
- 2 large eggs
- 3/4 c low fat milk
- 1/4 c prepared barbecue sauce
- 1 1/2 c shredded part skim mozzarella
- 1 c chopped mushrooms
- 1 c finely chopped red onion
- 1 c chopped pepperoni
- 1/2 c chopped sun dried tomatoes
- 1 1/2 c prepared marinara sauce
