Combine the leeks, potatoes, milk and 2 c water in a pot
- 4 medium leeks, trimmed, washed and sliced thin
- 2 large yukon potatoes, peeled and sliced 1/8" thick
- 2 c whole milk
- Kosher salt
- 1 c heavy cream
- 1 tbsp sliced chives
Bacon Wrapped Potatoes with Honey Scallion Sauce

- 2 large Idaho potatoes
- 12 slices bacon
- 2 c canola oil
- 2 tbsp unsalted butter, melted
- 1 tbsp honey
- 1 tbsp chopped scallions
- 1/2 tsp chopped fresh parsley
- Kosher salt and freshly ground pepper
English-Muffin Breakfast Pizza

Preheat the oven to 450 degrees
- 1 whole-wheat English muffin, split
- 1 small tomato, seeded and diced
- 1 teaspoon extra-virgin olive oil
- 1 thin slice (1/2 ounce) Canadian bacon, diced
- 1/4 cup shredded part-skim mozzarella cheese
- Chopped fresh basil, for garnish
Grilled Chicken and Potatoes with Tomato and Cucumber Salad

Prepare a medium high gas grill fire
- 1 1/2 lb baby potatoes, quartered
- Kosher salt
- 2/3 c EVOO
- 1 1/4 tsp grated lemon zest plus juice
- 2 anchovy fillets
- 1 large garlic clove, mashed to paste
- Ground black pepper
- 4 small boneless, skinless chicken breasts
- 1/2 large seedless cucumber, peeled, seeded and cut into 1/2" pieces
- 1 pint cherry tomatoes, halved
- 1/4 c coarsely chopped fresh mixed herbs

- 1/4 c plus 1 tbsp soy sauce
- 1/4 c plus 3 tbsp cornstarch
- 1 lb skinless boneless chicken thighs, trimmed and cut into 1 1/2" pieces
- 1 c low sodium chicken broth
- 1 tsp Chinese chile-garlic sauce
- 3 tbsp sugar
- 1 tbsp vegetable oil, plus more for frying
- 2 tbsp very finely chopped fresh ginger
- 2 large garlic cloves, minced
- 4 scallions, thinly sliced
- Steamed broccoli and white rice, for serving
Sage Walnut Butter Pasta

Combine balsamic vinegar, honey and bay leaf in a saucepan over medium high heat
- 1/4 c balsamic vinegar
- 2 tsp honey
- Bay leaf
- 6 tbsp butter
- 1/3 c sage leaves
- 1 c chopped walnuts
- 1 c pasta cooking water
- 1 lb cooked tortellini
- Grated parmesan
- Salt
Tuna Burgers

Pulse tuna in a food processor to chop finely, then gently combine with other patty ingredients
- Sauce:
- 2 lbs fresh sashimi grade tuna, cut into chunks
- 3-4 cloves garlic, minced or grated
- 1 piece gingeroot, peeled and grated
- 1 small bunch of scallions, minced
- Black pepper
- 3 tbsp tamari or ponzu sauce
- Stir fry or canola oil
- 4 brioche buns
- Pickled red onions
- Pickled ginger
- 3/4 c creme fraiche or aioli
- 2 tsp wasabi paste
- 3 tbsp chopped chives
- Zest and juice of one lime
Saucy Carbonara Pasta

Cook pasta according to package directions
- 1 16 oz. package of spaghetti
- 2 tbsp olive oil
- 4 oz. dried panchetta or bason
- 1/2 c walnuts chopped
- 4 cloves garlic, minced
- 1/2 c white wine
- 1/4 tsp crushed red pepper flakes
- 2 eggs
- 1 c parmesan cheese
- 1/4 c chopped parsley
- Ground black pepper
Simple Scalloped Potatoes

Position a rack in the upper third of the oven and preheat to 425 degrees F
- 1 1/2 tbsp unsalted butter, cut into pieces, plus more for brushing
- 1/2 clove garlic
- 2 lbs russet potatoes, peeled and sliced 1/8" thick
- Kosher salt and freshly ground pepper
- 1 1/4 c low sodium chicken broth
- 1/2 c skim milk
- 1/4 tsp freshly grated nutmeg

- 1/4 About 1/4 c ponzu or tamari sauce
- 1 tbsp honey
- 2-3 tbsp sriracha
- 1 1/2 tsp toasted sesame oil
- 2 tbsp black sesame seeds or toasted sesame seeds
