Chicken Fried Fish

Place the green beans in a microwave safe dish
- 12 oz. green beans, trimmed
- Kosher salt
- 4 6oz. tilapia fillets
- Freshly ground pepper
- 3/4 c all purpose flour
- 3/4 tsp paprika
- 2 large eggs
- 1/4 c vegetable oil
- 1 1/4 c low sodium chicken broth
- 1/4 c whole milk
- 2 tbsp cream cheese
- 1 tbsp fresh chopped parsley
Pumpkin Spice Bars

Preheat the oven to 350 degrees F
- Cooking spray
- 2 1/2 c all purpose flour
- 1 1/2 c rolled oats
- 1 c confectioner's sugar
- 1 1/2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1/2 tsp salt
- 3 sticks unsalted butter, at room temperature
- 1 1/2 c pumpkin butter
Perfectly Simple Dark Chocolate Tart

Position a rack in the middle of the oven and preheat it to 350 degrees F
- Crust:
- 1/2 c confectioner's sugar
- 1/4 c toasted walnuts, cooled
- 3/4 c all purpose flour
- 1/4 c unsweetened cocoa powder
- 1/4 tsp salt
- 1/2 c cold unsalted butter cut into small pieces
- Filling:
- 14 oz. bittersweet or semisweet chocolate, chopped
- 6 tbsp unsalted butter
- 2 large eggs, lightly beaten
- 1/4 c sugar
- 1 tsp vanilla extract
- Cocoa powder for dusting
Chocolate Chocolate Chip Muffins

Preheat oven to 400 degrees F
- 7.9 oz. all purpose flour (1 3/4 c)
- 1/2 c packed brown sugar
- 1/4 c unsweetened cocoa
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 c warm water
- 1/4 c canola oil
- 1 tbsp red wine vinegar
- 1 tsp vanilla extract
- 1 egg, lightly beaten
- 1/2 c chocolate chips
- Cooking spray
Chicken and Leek Stew

In a skillet, heat 1 tbsp of the oil
- 2 tbsp EVOO
- 2 medium leeks, white and tender green parts only, thinly sliced
- 1/2 lb cremini mushrooms, thinly sliced
- Salt and freshly ground black pepper
- 1 lb skinless, boneless chicken breast halves cut into 2" pieces
- All purpose flour, for dusting
- 1 1/2 c chicken stock or low sodium broth
- 1 tbsp chopped thyme
- 2 tbsp sour cream
- 2 tsp Dijon mustard
Grilled Zucchini with Chive Oil

Put all but 1 tbsp chives in a blender and drizzle in walnut oil
- 3/4 oz. fresh chives, thinly sliced
- 1/2 c plus 2 tbsp walnut oil
- 1 lb small zucchini, cut on a bias
- Kosher salt and freshly ground black pepper
Grilled Pork Chops with Nectarines

Preheat grill to medium high heat Combine thyme, oil and garlic in a small bowl
- 1 tbsp fresh chopped thyme
- 3 1/2 tsp EVOO
- 2 tsp minced garlic
- 4 6 oz. bone in center pork chops
- 1/4 kosher salt
- 1/4 tsp freshly ground black pepper
- cooking spray
- 2 nectarines
- 1/2 tsp sugar
- 1/4 tsp ground cumin
- 1/8 tsp ground red pepper
- 4 tsp marscapone cheese
Steak and Tomato Panzanella

Preheat the broiler to high
- 1 lb flank steak, trimmed and cut into 1" cubes
- Cooking spray
- 3/4 tsp freshly ground pepper
- 1/2 tsp kosher salt, divided
- 6 oz toasted french bread cut into 1" pieces
- 1 lb cherry tomatoes halved
- 2 tbsp EVOO
- 1 tbsp balsamic vinegar
- 1/4 c parmesan cheese
- 1/2 c torn fresh basil leaves
- Serve w/ sauteed spinach
Buffalo Chicken Tater Tot Casserole

Instructions Make the buffalo sauce by melting the butter in a saucepan on medium heat
- 4 cooked chicken breasts, diced (about 2 pounds)
- 3/4 cup butter
- 1 cup hot sauce
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/3 cup crumbled blue cheese
- 1 package (1kg) Tater Tots
- 1 cup grated cheddar cheese
- 3/4 cup diced celery
Blue Cheese Dip

Blend the heavy cream in a blender until slightly thickened
- 1/2 c heavy cream
- 1 8 oz. container sour cream
- 2 tbsp fresh lemon juice
- 4 oz. blue cheese, crumbled
- 2 scallions, finely chopped
- 1/2 tsp garlic powder
- Kosher salt and freshly ground pepper
