Pumpkin Cheesecake with Bourbon Spiked Cream

To prepare the cheesecake, preheat the oven to 350 degrees F
- Cheesecake:
- 1 1/2 c vanilla wafer crumbs
- 1 c pecans, ground
- 1 stick unsalted butter, melted
- 2 lbs cream cheese, cubed and softened
- 1 c lightly packed brown sugar
- 6 large eggs
- 1/2 c heavy cream
- 1/2 c all purpose flour
- Pinch of salt
- 1/2 tsp ground cinnamon
- 1 tsp pure vanilla extract
- 2 c canned pure pumpkin
- Toppings:
- 2 c sweetened whipped cream
- Dash of bourbon
- 3/4 c half and half
- 1 tbsp unsalted butter
- 8 oz. semisweet chocolate chips
- 1/4 tsp pure vanilla extract
Chicken in Tomato Caper Sauce

Pound chicken breasts with a mallet to 1/4" thickness; sprinkle with pepper
- 4 boneless chicken breasts
- 1/4 tsp pepper
- 2 tbsp oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 cans no salt added diced tomatoes
- 1 pkg fresh baby spinach
- 2 tbsp drained capers
- 2 tbsp minced basil
- 1/4 tsp cayenne pepper
- 1/2 c shredded mozzarella cheese
- 1/2 c parmesan cheese
Strawberry Prosecco Sparkler

Drop a sugar cube into each of 6 glasses and douse with a few dashes of bitters
- 6 sugar cubes
- Angostura bitters
- 750 ml prosecco, Champagne or sparkling wine
- 4 thinly sliced strawberries
Ann Romney Welsh Skillet Cakes

Beat egg with milk. Add currants
- 1 1 1 egg
- 1 1/4 1 1/4 1/4 c currants
- 1/2 1/2 1/2 c milk
- 3 1/2 3 1/2 1/2 c flour
- 1 1 1 c sugar
- 2 2 2 tsp nutmeg
- 1/2 1/2 1/2 tsp baking powder
- 1/2 1/2 1/2 tsp baking soda
- 1/4 1/4 1/4 tsp salt
- 1 1 1 c butter

- 1 tsp fresh lemon juice
- 1/2 tsp Dijon mustard
- 2 large egg yolks
- 3/4 c canola oil
- 1/4 tsp salt
- 1/8 tsp freshly ground black pepper
- 1 garlic clove, minced

- 1 small box instant pudding mix
- Milk for pudding

Blue Cheese and Pecan Stuffed Celery

- 4 oz. softened cream cheese
- 1/2 c crumbled blue cheese
- 1/2 c chopped toasted pecans
- 2 tbsp chopped dried cranberries

- 2 large eggs
- 1 can kidney beans, drained and rinsed
- 1 medium bell pepper, finely diced
- 1 c fresh corn kernels
- 1/4 c tomato paste
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp oregano
- 1/2 tsp chili powder
- 1 tsp salt
- 1/4 tsp pepper
- 1 lb extra lean ground beef
- 1 c grated cheddar
- 1/2 c low fat sour cream
- Sliced scallions for garnish
