Baked Penne with Roasted Vegetables

Preheat the oven to 450 degrees F
- 2 red peppers, cored and cut into 1-inch wide strips
- 2 zucchini, quartered lengthwise and cut into 1-inch cubes
- 2 summer squash, quartered lengthwise and cut into 1-inch cubes
- 4 cremini mushrooms, halved
- 1 yellow onion, peeled and sliced into 1-inch strips
- 1/4 cup extra-virgin olive oil
- 1 teaspoon salt, divided
- 1 teaspoon freshly ground black pepper, divided
- 1 tablespoon dried Italian herb mix or herbs de Provence
- 1 pound penne pasta
- 3 cups marinara sauce (store bought or homemade)
- 1 cup grated fontina cheese
- 1/2 cup grated smoked mozzarella
- 1 1/2 cups frozen peas, thawed
- 1/4 cup grated Parmesan, plus 1/3 cup for topping
- 2 tablespoons butter, cut into small pieces

- Meatballs:
- 1 lb ground beef
- 2 egg yolks
- 1/3 c dry bread crumbs
- 1/3 c parmesan cheese
- 2 tbsp chopped parsley
- 3/4 tsp garlic salt
- 1/2 tsp oregano
- 1/4 tsp pepper
- 1/4 c olive oil
- Tangy BBQ Sauce:
- 1 1/4 c brown sugar
- 1 c ketchup
- 1 tbsp dry mustard
- 2 tbsp worcestershire sauce
- 2 tbsp vinegar
- 1 c strong coffee
- 1/2 c finely chopped onion
- 1 tsp salt
- 1/8 tsp pepper
White Sangria

Mix all ingredients together in a punch bowl or large pitcher
- 1 bottle (750 ml) dry white wine
- 1/4 c light rum
- 3 tbsp elderflower liqueur
- 2 tbsp sugar
- 2 sliced nectarines
- 2 sliced plums
- 1 sliced lemon
- 1 1/2 c seltzer
Hot & Spicy Pie

Put a pizza stone or upside down baking sheet in the oven; preheat to 500 degrees F
- 1 tbsp sea salt
- 1 tbsp cayenne pepper
- 1 tbsp white pepper
- 1 tbsp garlic powder
- 2 tsp coarsely ground black pepper
- 2 tsp ground cumin
- 1 tsp dried basil
- 2 skinless, boneless chicken breasts
- EVOO, for brushing
- 2 hot sausage links
- 1 lb pizza dough
- All purpose flour, for dusting
- Cornmeal, for dusting
- 3/4 c pizza sauce
- 1 c shredded mozzarella cheese
- 1/4 c sliced pepperoni
- 2 tbsp grated parmesan cheese
- 8 fresh basil leaves, torn
Zucchini Ricotta Fritters

In a large bowl, combine the zucchini, garlic, scallions, ricotta, eggs, lemon zest and 1 tsp of salt and pepper
- 2 medium zucchini, coarsely shredded
- 2 garlic cloves, very thinly sliced
- 3 large scallions, very thinly sliced
- 1/2 c fresh ricotta cheese
- 2 large eggs
- 2 tsp lemon zest
- Kosher salt and freshly ground black pepper
- 3/4 c all purpose flour
- Olive oil, for frying
- Lemon wedges for serving
Beef Barbacoa Tacos

Heat a large Dutch oven over medium high heat
- 8 dried guajillo chiles, stemmed and seeded
- 2 plum tomatoes, quartered
- 1 small white onion, quartered
- 8 cloves garlic, unpeeled
- Kosher salt
- 2 lbs beef chuck, cut into 1"-2" pieces
- 1/2 tsp cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 1 c roughly chopped fresh cilantro
- 1/4 tsp dried thyme
- 2 bay leaves
- Freshly ground black pepper
- Corn tortillas, assorted toppings for serving (jalapeno, scallions, radishes, cabbage)

- 1 20 oz package peeled, cubed butternut squash
- 2 tbsp butter
- 3 tbsp flour
- 2 1/2 c milk, heated
- 1 tsp salt
- 1/4 tsp pepper

- 2 c grated sharp cheddar cheese
- 2 dashes hot sauce
- 1 lb cavatappi pasta
