Brie with Apples

In small bowl, melt butter in microwave
- Wheel of brie cheese, 19. oz.
- 1 c chopped apples
- 1/2 c sliced almonds
- 1/2 c dried cranberries
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- 2 tbsp butter
Tarragon Chicken & Romaine Salad

Place potatoes in a small saucepan; add water to cover
- Dressing:
- 1 1/2 cubed red potatoes
- 1/4 cup finely chopped onion
- 1/4 cup Dijon mustard
- 1/4 cup white wine vinegar
- 1/4 cup lemon juice
- 2 tsp dried tarragon
- 1 garlic clove, minced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup canola oil
- Salad:
- 2 pkg hearts of romaine salad mix
- 4 cups cubed cooked chicken
- 1 cup chopped celery
- Small romaine heart leaves
- 16 bacon strips crumbled
Slow Cooked Coconut Chicken

In a large bowl, combine the first five ingredients
- 1/2 c coconut milk
- 2 tbsp brown sugar
- 2 tbsp reduced sodium soy sauce
- 2 garlic cloves, minced
- 1/8 tsp ground cloves
- 6 boneless skinless chicken thighs
- 6 tbsp flaked coconut, toasted
- minced fresh cilantro
Crock-Pot Nutella Banana Bread

In a bowl, mix flour, baking soda and salt
- 2 Cups Flour
- 3/4 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 1/4 Cup Stick Butter, room temperature
- 1 Cup Sugar
- 2 Eggs
- 1 1/4 Cups Banana, mashed (about 3 bananas)
- 1/3 Cup Milk
- 1 Teaspoon Vanilla Extract
- 3/4 Cup Nutella
Spaghetti Carbonara

Bring a large pot of salted water to a boil
- 6 slices bacon cut into 1/2" pieces
- 2 tbsp EVOO
- 3 cloves garlic, crushed
- 1/2 tsp minced fresh rosemary
- 2 red jalapeno peppers, seeded and minced
- 1/4 c cognac or brandy
- 12 oz. spaghetti
- 3 large eggs
- 3/4 c parmesan cheese
- 1/2 c pecorino romano
- 2 tbsp chopped fresh parsley
- Freshly ground pepper
Grilled Steak and Eggs with Beer and Molasses

Make the sauce: In a medium saucepan over medium heat, melt the butter
- For the sauce:
- 1 1/2 teaspoons unsalted butter
- 1/2 medium onion, finely diced
- 1 clove garlic, minced
- 1 cup ketchup
- 1/2 cup molasses
- 1/2 cup apple cider
- 2 tablespoons sugar
- 1/2 cup lager-style beer
- 1 1/2 teaspoons yellow mustard
- 2 teaspoons lemon juice
- 1 1/2 teaspoons Worcestershire sauce
- 1 1/2 teaspoons cayenne pepper
- 1 1/2 teaspoons paprika
- For the steak and eggs:
- 2 1-pound strip steaks (1/2 inch thick)
- Salt and freshly ground pepper
- 1 tablespoon vegetable oil
- 4 grilled eggs (recipe below)

- 2 jalapeno peppers, seeds removed and minced
- 1 14 oz. can yellow corn, drained
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1/2 tsp freshly ground pepper
- 1/4 tsp ground cayenne pepper
- 1 tsp salt
- 1 c shredded sharp cheddar cheese

- 9 slices white or wheat sandwich bread
- 1 heat butter lettuce, chopped
- 1/4 c chopped flat leaf parsley
- 1/4 c chopped tarragon
- 1 tbsp dijon mustard
- 1 tbsp fresh lemon juice or white wine vinegar
- 1/4 c EVOO
