Eggplant Parm

Preheat the oven to 350 degrees F
- One 28 oz. can whole tomatoes
- 2 tbsp olive oil plus more for frying
- Salt
- All purpose flour for dredging
- 4 large eggs, lightly beaten
- 2 c seasoned dry breadcrumbs
- One 2 lb. eggplant cut lengthwise into 1/4" thick slices
- 6 garlic cloves, smashed and peeled
- 12 oz. fresh mozzarella, sliced 1/4" thick
- 1 c freshly grated parmesan cheese
- 1 c basil leaves
Green Chile Pork Posole

Trim the fat from the meat
- 1 12 oz. pork tenderloin
- 2 15 oz. cans of hominy, rinsed and drained
- 1 16 oz. jar salsa verde
- 1 14 oz. can reduced sodium chicken broth
- 2 4 oz. cans diced green chile peppers, undrained
- 1 cup coarsely chopped onion
- 1 tbsp ground cumin
- 4 cloves garlic, minced
- 1 tsp dried oregano, crushed
- 1/4 tsp crushed red pepper
- Snipped fresh cilantro
- Crispy tortilla strips
Mushroom, Walnut & Thyme Cheesecake

Preheat the oven to 325 degrees F
- Filling:
- 1 c dry bread crumbs
- 1/4 c butter, melted
- 1 tbsp butter
- 1/2 lb baby portobello mushrooms, chopped
- 1 garlic clove, minced
- 1/2 c chopped walnuts
- 1 tbsp minced fresh thyme
- 1 tsp reduced sodium soy sauce
- 1/4 tsp white pepper
- 2 pkg cream cheese softened
- 1/2 c plain greek yogurt
- 2 eggs, lightly beaten
Wild Mushroom Soup w/ Sherry & Thyme

Melt the butter and EVOO in a stockpot or dutch oven over medium high heat
- 2 tbsp unsalted butter
- 2 tbsp EVOO
- 1 medium onion, diced
- 4 cloves garlic, minced
- 3/4 lb fresh mushrooms, sliced, and trimmed
- 2 tbsp plus 1 tsp thyme leaves
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground pepper
- 4 c chicken or vegetable broth
- 1/4 c half and half
- 3 tbsp dry sherry
- 1 tbsp soy sauce
Corn, Chile & Cheese Quesadillas

Fit a rack over a baking sheet and put the sheet in the oven
- 5 tbsp vegetable oil
- 1 c small diced chiles
- 1 1/2 c small diced summer squash
- Kosher salt and freshly ground pepper
- 1 c fresh corn kernals
- 1/8 tsp chipotle chile powder
- 1 c diced tomato
- 1/4 c chopped fresh cilantro
- 1 tbsp fresh lime juice
- 4 9" flour tortillas
- 2 c grated cheddar cheese
- Sour cream, for serving
Salted Caramel Pots de Creme

Preheat the oven to 325 degrees F
- 1 1/4 cups sugar
- 1/4 cup water
- 1/4 tsp salt
- 1 1/2 cups whipping cream
- 1/2 cup whole milk
- 6 egg yolks
- 1 tsp sea salt
Potato and Leek Gratin

Preheat oven to 375 degrees F
- 2 1/2 c milk
- 1 1/2 lb yukon gold potatoes, peeled and very thinly sliced
- 2 garlic cloves, smashed
- 1 tbsp unsalted butter
- 1 large leek, trimmed, halved lengthwise and sliced
- 1 tsp kosher salt, divided
- 2 oz gruyere cheese, shredded
- 1 oz parmesan cheese, grated
- 1/2 tsp freshly ground black pepper
Brussel Sprouts Gratin

Preheat the oven to 400 degrees F and butter a 2 qt
- 2 tbsp unsalted butter cut into pieces, plus more for the dish
- Kosher salt
- 1 lb Brussels sprouts, over leaves and stems removed
- Pinch of red pepper flakes
- Freshly ground pepper
- 1/2 c heavy cream
- 1/2 c grated white cheddar cheese
- 1/2 c breadcrumbs
Pepper Steak and Rice Pilaf with Mushrooms

In a medium pot over medium to medium high heat add a tablespoon of oil and a tablespoon of butter
- Mushroom Rice Pilaf:
- 1 tablespoon extra-virgin olive oil, eyeball it
- 1 tablespoon butter
- 10 white mushrooms, chopped
- 1 3/4 cups water
- 1 package rice pilaf mix (recommended: Near East brand), 6.09 ounces
- 2 tablespoons chopped parsley leaves
- Pepper Steak:
- 2 tablespoons vegetable oil, 2 turns of the pan
- 2 pounds tenderloin tips or sirloin, cut into chunks
- Coarse salt
- 2 tablespoons butter
- 2 green bell peppers, seeded, 2 inch dice
- 1/2 white onion, sliced
- 2 tablespoons all-purpose flour
- 1 tablespoon tomato paste
- 1/4 cup dry sherry – eyeball it
- 1 1/2 cups beef consomme
- 1 teaspoon coarse black pepper
Brie with Apples

In a small bowl, melt butter in the microwave
- Small Small wheel of Brie
- 2 2 2 c chopped apples
- 1/2 1/2 1/2 c sliced almonds
- 1/2 1/2 1/2 c dried cranberries
- 2 2 2 tbsp brown sugar
- 1/2 1/2 1/2 tsp cinnamon
- 2 2 2 tbsp butter
