Quinoa Salad w/ Apples, Walnuts, Dried Cranberries & Gouda

In a bowl, rinse the quinoa with water, rubbing it between you fingers for about 10 mins
- 1 1/2 c quinoa, preferably red
- Sea salt
- 5 tbsp EVOO
- 1 large red onion, sliced
- 2 tbsp balsamic vinegar
- 4 oz arugula
- 4 oz aged gouda, finely diced
- 3 medium celery stalks, thinly sliced
- 1 large crisp apple such as Fuji cut into 1/2” dice
- 1 c walnuts, coarsely chopped
- 1 c finely diced fennel
- 3/4 c dried cranberries
- 3 tbsp sherry vinegar
- Freshly ground black pepper
Apple Cinnamon Steel-Cut Oatmeal

Crockpot Girl Recipe
- 2 c steel-cut oats
- 4 c water
- 5 c milk
- 1 large apple cut into 1/2" pieces
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/2 tsp salt
Crockpot Cabbage Tamales

In a bowl, mix the ground beef, sausage, rice and 2-3 cloves of garlic
- 1 lb ground beef
- 1/2 lb hot sausage
- 1 c long grained rice
- 5-6 cloves garlic, minced, divided
- 1 head green cabbage
- 2 small cans of tomato sauce
- 5 cans of water
- 3 tbsp chili blend seasoning
Herb Marinated Chicken Skewers

Marinate the chicken in a large bowl, combining the olive oil with rosemary leaves, thyme, oregano and ground cumin
- Chicken:
- 1/4 c. extra virgin olive oil
- 1 tbsp rosemary leaves
- 1 tsp chopped thyme
- 1 tsp. chopped oregano
- 1 tsp. ground cumin
- 1 1/2 lbs. skinless, boneless chicken breast halves cut into 1 1/2 in. cubes
- Harissa:
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp caraway seeds
- 2 roasted red peppers from a jar, drained and coarsely chopped
- 1 red Thai chile, with seeds, chopped
- 1 garlic clove, chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp freshly squeezed lemon juice
- Salt
- Store bought hummus for serving
Divine Devil's Food Cake

Position a rack in the middle of the oven and preheat the oven to 350 degrees F
- Cake:
- 2 c cake flour
- 2/3 c natural cocoa powder
- 1 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 c buttermilk
- 1/3 c water
- 3/4 c unsalted butter at room temperature
- 1 3/4 c sugar
- 2 large eggs
- 1 1/2 tsp pure vanilla extract
- Frosting:
- 7 1/2 oz. bittersweet or semisweet chocolate
- 1/2 c heavy whipping cream
- 3 tbsp unsalted butter at room temperature
Broccoli Slaw with Lemon Dressing

In a large bowl, mix together the first 8 ingredients
- 1/2 c sour cream
- 3 tbsp lemon juice
- 2 tbsp mayonnaise
- 1 tbsp white wine vinegar
- 2 tsp grated lemon peel
- 1 tsp dijon mustard
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1 pkg broccoli coleslaw mix
- 2 large red apples, julienned
Peanut Sauce & Pasta

Combine all ingredients except pasta in a bowl
- 1/2 box cooked pasta
- 4 tbsp peanut butter
- 3 tbsp tamari
- 3 tbsp honey
- Ginger root
- Pinch of red pepper flakes
- 1/2 squeezed orange
- 1/2 orange rind grated
Monster Marshmallow Cookies

Make the cookies: preheat the oven to 350 degrees F
- For the cookies:
- 2 c all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 sticks unsalted butter, softened
- 1 c granulated sugar
- 1 c packed light brown sugar
- 2 large eggs, at room temperature
- 1 tbsp vanilla extract
- 2 c quick cooking oats
- 1 1/4 c crispy rice cereal
- 1 c milk chocolate chips
- 1 c coarsely chopped pecans
- 1 c mini marshmallows
- For the topping:
- 1/2 c milk chocolate chips
- 1/2 c mini marshmallows
- 2 1/2 tsp half and half
- Pinch of cayenne pepper
- 1/3 c finely chopped pecans
Chilled Peach Soup with Fresh Goat Cheese

In a bowl, toss the peaches, diced cucumber, yellow pepper and apricots
- 3 c sliced peeled peaches
- 1/4 c finely diced peeled seedless cucumber, plus thin slices for garnish
- 1/4 c finely diced yellow bell pepper, plus thin slices for garnish
- 1/4 c diced dried apricots
- 2 tbsp honey
- 3 tbsp crumbled fresh goat cheese, plus more for garnish
- 1/4 c white balsamic vinegar, plus more for seasoning
- 1/4 c plus 2 tbsp EVOO, plus more for drizzling
- Kosher salt
- 1 large garlic clove
- 2 c diced baguette
- Basil leaves, for garnish
- Freshly ground black pepper
Beef Stew

Heat saute pan over med. heat and add 1 tsp olive oil
- 2 tbsp olive oil
- 2 lbs steak
- 1 1/2 tsp salt
- 3/4 tsp pepper
- 2 tbsp butter
- 1/2 lb mushrooms sliced
- 3 tbsp flour
- 3 c. beef stock
- 2 tbsp tomato paste
- 1/4 tsp each of dried thyme, oregano and basil
- 1/8 tsp. allspice
- 1 lb. yellow/red waxy potatoes quartered
- 1 c. diced carrots
- 1 c. pearl onions
- 1/2 c. frozen peas
