Pumpkin Waffles With Trail-Mix Topping

Prep the pumpkin: Preheat the oven to 350 degrees F
- For the Waffles:
- 1 small sugar pie pumpkin (2 to 3 pounds)
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons pumpkin-pie spice
- 1/2 cup packed light brown sugar
- 2 large eggs, separated
- 1/4 cup plain Greek yogurt
- 1 cup whole milk
- 4 tablespoons unsalted butter, melted
- For the Topping:
- 1/4 cup slivered almonds
- 1/4 cup raw sunflower seeds
- 1 1/2 tablespoons pure maple syrup
- Coarse salt
- 1/4 cup dried cherries or cranberries
- Whipped cream, for serving (optional)
Wine Poached Pears with Raspberries

Combine first 7 ingredients in a large saucepan, stirring with a whisk
- 1 c sweet white wine
- 1/2 c water
- 2 tbsp sugar
- 1 tbsp fresh lemon juice
- 1/8 tsp salt
- 2 black peppercorns
- 1 cinnamon stick
- 4 pears, peeled, halved lengthwise and cored
- 1 c fresh raspberries
Spiced Couscous and Chicken

Bring 2/5 c water to a boil in a medium saucepan over medium high heat
- 3/4 tsp ground cinnamon
- 1 tsp ground ginger
- Kosher salt and freshly ground pepper
- 4 medium carrots, thinly sliced
- 1 c couscous, preferably whole wheat
- 2 c coarsely shredded rotisserie chicken
- 3 tbsp unsalted butter
- 1/2 c sliced almonds
- 1/4 c golden raisins
- 4 scallions, white and light green parts only, roughly chopped
- 1/2 c roughly chopped cilantro and more for topping
- Greek yogurt and/or harissa or other hot sauce, for topping
Grilled Cheese with Bacon and Thousand Island Dressing

Cook the bacon in a large nonstick skillet over medium high heat until crisp, about 8 mins
- 8 strips thick cut maple glazed bacon
- 2 tbsp unsalted butter, plus more as needed
- 8 slices sourdough bread
- 12 oz. cotswold cheese or cheddar, shredded
- 4 tbsp Thousand Island dressing
Sauteed Chicken Cutlets and Cherry Tomatoes with Spinach Orzo

Cook orzo according to package directions
- 3/4 c orzo
- 1 bunch spinach, thick stems discarded, leaves torn
- Kosher salt and pepper
- 2 tbsp olive oil
- 8 small chicken cutlets
- 1 pint grape tomatoes, halved
- 4 small sweet cherry peppers, thinly sliced
- 2 cloves garlic, thinly sliced
- 1 cup low sodium chicken broth
Pumpkin Spice Milkshakes

Blend all of the ingredients together until smooth
- 14 oz softened butter pecan ice cream
- 1/4 c malted milk powder
- 2 tbsp milk
- 2 tsp pumpkin pie spice
Chicken Posole

In a large pot, heat 1/4 c
- 1/4 c. plus 1 tbsp extra virgin olive oil
- 1 large yellow onion, halved lengthwise and thinly sliced crosswise
- 2 tsp dried oregano
- 3/4 tsp chile powder
- 1/2 tsp ground cumin
- 3 lbs chicken drumsticks and thighs
- 4 c. chicken stock
- Salt and freshly ground pepper
- Two 15 oz. cans hominy, drained and rinsed
- 1 lb. plum tomatoes, chopped
- 1 small red onion, finely chopped
- 1 tbsp fresh lime juice
- Hot sauce
- Lime wedges, diced radishes, sliced scallions, shredded romaine, cilantro leaves and tortilla chips, for serving.
Green Hummus

Combine all ingredients in food processor and drizzle in olive oil while running
- Chickpeas, drained and rinsed
- Garlic
- Green onion
- Parsley
- Basil
- Lemon
- Olive oil
- Honey
- Ground sesamee
Thai Style Spicy Chicken in Lettuce Cups

Toast the rice in an 8" skillet over medium low heat, stirring frequently, until golden, 4-5 mins
- 3 tbsp uncooked jasmine rice
- 3 tbsp soy sauce
- 1 stalk lemongrass, trimmed and outer layer removed, inner core minced
- 1 tsp crushed red pepper flakes
- 1/2 tsp packed light brown sugar
- 1 1/4 lb ground chicken
- 1 medium shallot, minced
- 3 tbsp fresh lime juice
- 3 medium scallions, thinly sliced on the diagonal
- 2 tbsp coarsely chopped fresh cilantro
- 2 tbsp coarsely chopped fresh mint
- 1 medium heat butter lettuce, for serving
